600g - Grated Pumpkin
200-300g - Freshly Grated Coconut
100g - Butter/Margarine
1 cup - Cornmeal
1 1/2 Cups - Granulated White Sugar
2 Tbs - Ground Cinnamon (Cinnamon Powder)
1 Tbs - Ground Mixed Spice
1 1/2 tsp - Ground Nutmeg
1/4 Tsp - Salt - (optional or can be adjusted to Taste)
2 Tbs - Vanilla Essence (Vanilla extract) - Adjust to personal taste

It was great! My Guyanase in-laws suggested using brown sugar instead of white and double the about of pumpkin. Just something to try next time! Great video!

After successfully growing my own pumpkin I decided to use the pumpkin in many ways possible . Pumpkin rice ,punch,muffins pone etc. I came across your recipe and I must say It was so delicious I am making it for the second time this week ,I put a twist on it by adding raisins .
