What you know about that Haitian cuisine, Miss Gina? My neighbor is Haitian and she is one of the nicest most gracious people that I know. Girl, she really cooked plenty of her country's best dishes for Christmas! Her potato salad made with beets is soooo good. It is now my favorite potato salad. That Epis takes food to another level. I am a lover of Haitian cuisine now. It is so good!

Hi Gina! I love that you are representing for the Haitian Culture . Maybe next time let the chicken marinate in the epis and dry seasoning for at least an hour or days before actually cooking it. The point of scoring the chicken is so that the spices get deep down in there. Next you can add the chicken to cook in a covered pot and it will create its own water. You can gradually add a little water if necessary. Just a little tip!

I saw Several Comments Telling You Not to Add water or cook your Chicken in the Pot Like That. What They Don't Seem To See Or Understand is That You Deliberately Cooked Your Chicken in the Pot Is Because You Were. Making.Chicken Broth. And Using The Broth For The Rest Of The Recipe. Absolutely Brilliant! Wow! Love Your Haitian Chicken.
