Hanamaki steamed bun
(Ingredients)
100g bread flour
100g cake flour
(Or 200g general-purpose flour)
10g sugar
3g salt
3g Instant yeast
2 tablespoons of cooking oil
130g warm water
1 tbsp cooking oil to be applied to the dough
(Summary of how to make)
Mix the dough ingredients for 2 minutes
Primary proving until doubled in size
Degas the dough, roll it, and stretch it to 20 x 30 cm.
Apply cooking oil to the dough and wrap it
Cut into 6 equal parts and press the center with chopsticks
Secondary proving by arranging in a steamer
Bring water to a boil and steam over high heat for 10 minutes.
Teriyaki chicken
(Ingredients)
600g chicken thigh
1 piece of ginger (sliced)
1 teaspoon salt
2 tablespoons of soy sauce
2 tablespoons of sugar
Mirin 1 tbsp
(How to make teriyaki chicken)
Add salt to the surface of the chicken and put it in a plastic bag.
Add ginger, soy sauce, sugar and mirin and soak overnight.
Bake in an oven preheated to 200C(~390F) degrees for 15 minutes.
