Hey everyone! These Hello Kitty mochis are very easy to make in the microwave and are delicious filled with a red bean paste or even Nutella! All you need is some sweet rice flour (I got mine for a dollar/box!), sugar, and water! Enjoy, and don't forget to post pictures of your creations to my Facebook page! (on. 14LNQ1d)
Recipe adapted from Bakingdom (bit.ly/1djjGpo)
Makes 4 Hello Kitty mochis
Ingredients:
3/4 cup sweet rice flour
2 T. white sugar
1/3 cup water
Food coloring (optional)
Directions:
1. Combine all ingredients in a bowl. If needed, either clean sides of bowl or transfer mocha to a clean microwave safe bowl.
2. Microwave for 2 minutes, stir mochi as best as you can (paste should be thick)
3. Microwave for an additional 1 minute, take mochi out onto a work surface floured with the sweet rice flour and flour mochi. The mochi will be hot so be careful!
4. Roll out mochi with a floured rolling pin until it's ¼" thick. Cut out mochi using metal cookie cutters or a knife to cut mochi into rectangles.
Note: When making more colors of mochi, be sure to cover any finished mochi with plastic wrap to prevent it from drying out. Also, store the mochi covered with plastic wrap in the refrigerator.
Find me on Facebook and send me pictures of your kawaii treats and crafts: on. 14LNQ1d

P.S. This kit is intended to make mochi using the pounded rice method, but I used it to make the microwave style for easier mochi :-)

Thanks for the recipe. It worked great. I didn't have sweet rice flour, so I used glutinous rice flour with a little extra sugar. Also I only microwaved it once, since my microwave is very powerful, and I was afraid it would burn (even though it was at a low setting). Tasted just like store bought mochi - delicious! :)

I had the same trouble with the leftover pieces like you had when I made Garaedokk (korean cylinder shaped rice cakes. It's actually the same as mochi!). In order to receive the same texture of your mochi-leftovers as in the beginning, I was adding some splashes of water and put it into the microwave and repeated this step until I received a nice quality again... It's quite difficult though to achieve the same quality as before, since the rice dough can become liquidy or just ruined, so only little splashes. Not even a whole tablespoon or such. Less than that.. Hope that tip helps whenever you think of doing mochi again :D Btw: Thanks for this very cute video as always :DDD

The reason you need the pestle too if you use the microwave method is that even though you cook it in the microwave, if you pound it it will not become hard as FAST than if you just don't pound it. The pounding for a few minute does help develop the smoothness and elasticity of the mochi so yeah you do pound it less if you do it in the microwave but you do need to pound it a little. It makes the mochi way more enjoyable... and darn we don't have that kind of stuff around here because I would so get that rice pounder cute thing.
