i've been making pizza dough from scratch these past five years and the batch makes three decent sized pizzas. the sauce batch i make is enough for about three batches of pizza so i'll portion off the sauce into a plastic ice cube tray and freeze them. i can see making up this broth and doing the same thing. drop five or so pho cubes into a cup and microwave until hot, add noodle and various other ingredients and Viola; Mug-Oh-Pho* *sucks cooking for one but someone has to do it : / lol

@@hotforfood aww thanks !!! 🥺 we've been some of the lucky ones to still have power and water so we're v v v grateful (although looks like we might lose water soon). our friends didn't have electricity for three days and were running out of food that didn't need to be cooked to eat, so now we have 4 people, 4 cats, and 1 dog in a 576 sq ft house. it's been A Time but we've been lucky compared to a lot of other austinites

I found a thai basil plant a few years ago in the grocery store and I've started so many cuttings off of it. Everyone I know has a Thai basil plant now lol

@@hotforfood if you're starting from cuttings, I've found the best method is using rooting hormone and rooting them in water before planting them in soil.... And i do lots of them cause they don't always thrive. They need good sunlight too, otherwise they get leggy and sad

Is there something you'd recommend using instead of shiitake for umami? I've eaten pho made with shiitake broth before and the mushroomy flavour was too pungent for me.

so I've kinda changed how I make this! I do it even faster now. I just throw onion, ginger, garlic and all the spices into the pot with a bit of neutral oil, heat it up and once the spices are toasted and fragrant, I add water with a bit of better than bouillon chicken flavored stock (the vegan friendly one) and then simmer it with a lid on for like 20 mins. Then strain the broth. DONE! I don't even know the amounts I just eye ball it! but you could use this recipe as a guide

You're right in that it's not used much normally compared to fish sauce, but for those not eating meat (typically Buddhists) it is used a lot as an ingredient, though not straight as a condiment.
