I made mozzerella with raw milk and vinegar. Some say you can reheat and add more vinegar and get "ricotta." It didn't work for me.

Mary, as I expected, you were probably the only video that goes over the explanation of what true ricotta cheese is! Good for you! Most people are making cottage cheese and calling it ricotta. At least you distinguish the difference. That’s why I love you!

I love watching these. I wanted to see this because I ACCIDENTALLY made ricotta. Being from Wisconsin my grandma made cheeses It was always when milk was approaching a used by date. Germans in Kenosha could make anything edible before tossing it I had some cream that had froze and did not want to go back to a fluid. I thought ok...gonna try making cheese. Poured my milk in the pan. My burner like yours didn't want to get to boiling but it got close. I added lemon then tossed in the heavy cream hoping for the best. It didn't want to curd. I almost threw it out but instead used vinegar covered it and went in a corner to pout. 1/2 hour later everything was AMAZING I didn't know how it would end up but I felt pretty awesome. After it drained and sat in the fridge I had ricotta. I couldn't believe my taste and eyes I had a Sicilian mother in law She would've been so proud!

Good Morning Mary! There is one more thing you can do with that whey. Water your blue berry plants or any thing that you grow really. Now, I wouldn't do it just daily or anything like that but, if you want a boost in not only the health of the plant.. but the health to us when we eat the fruit of the plant or the plant it's self, this is the way to do it. The probiotic you talk about is great microbes for the garden as well. Many times our soils are missing these, they deplete over time. This will help with that.. and the acid that is in it.. is just a little boost of acid you might need in your soil or blueberry bush.

I use my induction portable burner for cheeses mine has a thermoter (sadly discontinued). I learned all from you. Thanks a million. Instead of flour sacks . I use never used cotton diaper old school thin ones.

Hi Mary - I had to watch how you did this. I use to make 4 gallons of goat milk into cheese every other day for many years when my kids were little. I was interested to see how much ricotta you would get out of this full fat milk. Like you stated, I only made ricotta after my cheese making process was complete.. you do not get much ricotta out of the whey when you have made cheese out of it.. but it is an added bonus and so delicous. It freezes well too. Thanks for showing your process.. Great video. :)

I’ve just returned from Sprouts grocery with (almost) every ingredient for a new vegetarian meatball recipe, that I’m jazzed to try! The missing very important item is ricotta cheese....my store does not carry it at all! One exception, tiny container of pseudo ricotta from almond products, about a 1/3 of a cup for just under $10.00!! Thank you, thank you, thank you‼️

Hi Mary, I need to use pasture raised organic milk,but only can find ultra pasteurized. Will this type of milk work for this recipe and the mozzarella cheese recipes? Can’t wait to try. Many thanks!

You don't have to worry about pasteurized or not. Pasteurized or not raw milk will be pasteurized before you add the vinegar. Typical pasteurization starts 162 degrees F for 15 seconds. Before you reach 200F, the milk will be above 162F for far longer than 15 seconds. I believe one of the other temps for pasteurization is 191F for a mere few seconds. We use raw at home for our ricotta because we know it is pasteurized during the process.

Also, I read in some of the comments below..is it also possible to use the Whey for Yogurt making? It should last about 2 weeks in your fridge. Hi Mary I love your videos. I have one concern an older persian science teacher that was a dr said adding an acid to milk was not good, could be a carcinogen, so I tend to stay away from that, but a lot of cooks are adding lemon and vinegar. Please any insight would be greatly appreciated.

I love ricotta! Thank you for this easy recipe. Trader Joe’s has a lemon ricotta that is simply divine. I wonder could we add the lemon and a bit of sugar? Thoughts?

Hi Brooke, Definitely!! I love making this Ricotta with lemon juice when I sweeten and use it fill cannolis. I highly recommend. I made it tonight with the vinegar, just to show a neutral option. I’ve been so looking forward to making this for my new vegetarian spinach ricotta meatballs recipe!! Made quantity modification by half for practicality and after watching video numerous times, attempted. Very little curdling, added vinegar, no additional curds were apparent. Finally decided, to go ahead and pour through cheese cloth lined colander. The cheese cloth upset and the mixture just washed through the colander and turned cheese cloth into a wasted wet rag. The mixture was still very white, not like yours at all. It was such a mess, I dumped it out..Boo hiss, I’m 🙈ashamed of my fail and waste. You make it look so fabulous and easy Mary🤓I’ll try again someday‼️💙

Next time don’t waste it… just tip into another bowl. Wring out your cloth and re lay into the colander. Tip curds back into the colander and keep going as per instructions. There are really no mistakes that can not be fixed in cooking. Try again you can do it! Cheers

I'm visiting this video again a year later and making this so I can write it down in my U-Tube cookbook. We love it in the stuffed shells. It's one of my family's favorites! Do you have a video on mozzarella cheese? I have tried to make it but end up with ricotta everytime which breaks my husband's heart, (not). I have found a store that sells milk that is pasteurized but not homogenized. The cream is on the top and yummy!
