This is one of my favorite recipes to make. Now, for those of you without a smoker, no worries! This can be done in an oven. If you are worried about loosing the smokiness, you can always include a few dashes of liquid smoke in your rub. Below I will include the recipe for the brine. To me, it would be a shame not to pair this with some good old fashioned mustard, sauerkraut and marble rye.
Pastrami Brine:
1 cup kosher salt
1/4 cup pink curing salt #1
1 cup sugar
1/2 cup brown sugar
1/4 cup honey
1TBSP black peppercorns
6 bay leaves
1 tbsp whole cloves
1/2 tbsp mustard seeds
