I've wanted a Vitamix for years and years. We just got our first one less than a week ago (the E320 from Crostco) and I love it every bit as much as I thought I would. I really like your style and the recipe, but I want to give you a HUGE high five for using grams!! My husband has a cooking food blog and I bake a lot. Grams make everything so much easier and more accurate than volume measurement. IMO, it shows that you're serious about your craft and that you have a professional mindset. Because the vitamix is much higher quality metal gears etc over 1000watts and so on a regular blender is not designed to do things like this I had a homgeek blender before my vitamix which broke while making a soup so yeah the reason being is because these blenders are made to commercial standards
