Nishime is one of my most fav Japanese dishes 😍🥰. Never get tired making and having it frequently 🤤 Just finished making one today on a rainy day here in Honolulu. As always, I ended up making a huge pot that I can share to 6 people and for myself to have it for straight 5 days 😆 I usually add a boiled egg and Mochi Kinchaku on my bowl ☺

I make Nishime for New Year’s. I add Konbu, and daikon in it also. I always tell myself I will only make a small amount but by the time I add everything in, it turns out I need the biggest pot I have! 😂 love your recipes! Happy Holidays!

This is one of my favourite recipes, but in my area some of the vegetables are very expensive and difficult to get, so I'm going to try making with some more affordable root vegetables so I can make it regularly. There are many othsr root vegetables avaliable in my area such as daikon, parsnips, sweet potato etc, so I'm sure I'll be able to make some delicious variations of this dish :)

Thank you so much for this! I've had my IP for three years and FINALLY used it. With COVID I don't allow my mom to shop so I knew she was having some guilt not making nishime, so I surprised her. I think my grandma would've been proud. I know mom was. I do not like shiitake and the smell has permeated my IP's rubber gasket. This was the first dish I made, it came out perfectly, now I want to get rid of that smell and I can't. Any suggestions? I've soaked it in lemon Dawn; whole box of baking soda; watered down bleach; and even tried coffee/grinds. Smell still there. :(

Great daughter!! Just keep cooking with the IP and the shiitake smell will go away. I notice certain smells cling to the plastic insert and only cooking with it will help. Good luck!

Wonderful! How delicious, thank you for this recipe, when my father was alive every new year we would have a soup called Ozoni, he would tell me each ingredient had a meaning and that we were suppose to have a good new year. Since he has been gone I have a hard time finding the ingredients to make it, we don't have a Japanese grocery close to where I live. This looks fabulous Nami! Unfortunately, most of the vegetables aren't available in my area: burdock/gobo, konnyaku, bamboo shoot, and satoimo are just not available in the local Asian markets here - it's a large university town with many international students but most of them are Chinese!

Hi Nami! I have a question regarding soy sauce. Which one are you using usually, usukuchi or regular one? I personally prefer usukuchi, but it doesn‘t have the nice dark color as regular one. Is there a „rule“ which soy sauce you should use for which dish?! What is your favourite brand? Here in Germany the sell mainly kikkomam and I don‘t like their regular dark soy sauce very much. And when you read „soy sauce“ without any further explanation in a japanese recipe, what do I use then, usukuchi or regular, or is that a matter of taste? Thank you for your gorgeous videos!!! Hi Jutta! It's a regional thing, too. Most people in Tokyo don't carry Usukuchi soy sauce, but many in Osaka/Kyoto area do in their kitchen. That's why when you go to west (Osaka/Kyoto) and order a bowl of noodle soup, the soup is very light color. When Osaka/Kyoto people come to Tokyo and order noodle soup (like Udon), they get shocked how black/dark our noodle soup is. It's just the regional preference. For me, I usually use Usukuchi for specific dishes that I want to keep the color. I use for chawanmushi, clear soup, certain simmered dishes.... but other than that, it's always regular (organic) soy sauce from Kikkoman. Yamasa is another brand if you don't like Kikkoman. Hope I answered to your question. :)

Hello. I am making this today but I have some questions. The only bamboo shoots I could find are boiled bamboo shoots. Can I still use it for this nishime? Just made this for the first time....be forewarned that this that a long time unless you are especially efficient in the kitchen...I can understand why this is a holiday dish! Definitely not the best for a weekday 😂
If you use Kombu Dashi and remove chicken yes it’s vegetarian dish.

I recognize carrot only, and maybe i can get hold on mushroom and peas if i'm lucky but these other vegetables are from vegeta's planet, are you kidding me!! even vegetables are different !

There root vegetables are common in Asian cooking so you can find in Asian (Chinese and Korean) grocery stores if you can’t find a Japanese grocery store. It’s typical ingredients in our cuisine but I know it’s not easy to find if there is no Asian grocery stores. You can make with what you have, but my intension is to show how to make this traditional Japanese new year dish.
