Raisins, sultanas, currants, citrus peel, sometimes dates in the soak. Cover well with brandy (my mother & grandmother used port) and keep for years if I don’t get around to making the fruitcake. Lots of walnuts, pecans, some mixed fruit and more peel in the batter. More brandy poured on, the cake wrapped in brandy soaked cloth, stored in tight tins and basted with brandy. Hard sauce and lemon sauce on the slices. We took to having it hot, very fitting as I suspect this evolved from an ancestral plum pudding.

It can work, but the baking powder in self-rising flour might be too much for this recipe. If you’re not up for testing a batch, I’d recommend sticking with all-purpose flour and adding the baking powder yourself for better control over the texture. Bless up!

No need to soak the fruits for months.... cover them with your wine and rum add some spices, cover pot tightly and bring to a boil lower the heat and let simmer for about 20 mins. Let it sit for at least a day then its good to go. Taste just like it was soaking for months

Those are candied or glacéd cherries not maraschino cherries, Maraschino cherries and candied cherries differ in appearance, taste, and how they are made. They are very different cherries. You cake looked very tasty nonetheless. My family makes the original pound fruit cake iykyk a lot of people don’t know that recipe but most of the variations are delicious.

Yes. You must not be a Jamaican. You'd probably freak out hearing Jamaican kids drink guiness. We take guiness, 1 egg, condensed milk, vanilla, cinnamon, nutmeg and blend it all together. (guiness= grains, eggs=protein, cinnamon/nutmeg= antioxidants, milk = proteins and healthy fats) I see many more young alcoholics in America than I've ever seen in Jamaica. Alcohol isn't taboo in Jamaica.

@@DeaDGirlSanyaI mean I get it. That's three and a half cups mixed with the dried fruits. Alcohol doesn't entirely leave the product during cooking, so there will still be a lot in the final product. It's nowhere near enough to be cautious around children though. A slice or two would be fine.
