Beautiful presentation! Looks soooo tasty! Friday I cooked your gyoza and it was so delicious. It is very smart to cook it first and fry it after. Also, I've been boiling eggs your way too! It's so much better. I will try this recipe tomorrow, but with boston butt, because I don't have the belly in my fridge. I hope it will work.

What is the point of boiling the meat before hand??? I would brown the sides first...You going to braise it for hours... Ok so you collect the extra fat...
