We actually don't use Onion-Garlic. We use Ginger-Hing (Asafoetida) and Ratanjot infused in oil. Don't use Kashmiri Chilli Powder, use the dried Kashmiri Chillies and soak them in hot water a bit and make paste. You'll be surprised by the color and taste even if you're not using Ratanjot as most people might not have access to that. And no need to add Saffron either. Why are you adding Tomatoes to Rogan Josh ? Where's the Yogurt ? This is a winter dish, add Yogurt please to please your guts :)) LOL !! My ingredients : Mutton (bone pieces) + Mustard Oil + Ginger powder (paste if not available) + Hing (Asafoetida) + Kashmiri Red Chillies + Ratanjot + Cinnamon + Cardamon + Cloves + Black Pepper + Fennel powder + Yogurt. DONE ! Edit : Don't forget to add salt like I did :P LOL !

@Chop Chop Chopra. This is not authentic Kashmiri Rogan Josh. ( Kashmiris don't use onions, tomatoes, ginger garlic paste.) Let me share you the procedure in kashmiri style. 1. take oil, add hing, cloves, green cardamom, black cardamon cinnamon sticks. 2. in about 30-45 seconds add Goat/Lamb meat ( preferably Lamb). 3. Cook it for 15 mins. 4. Add Kashmiri Mirch ( depending on your spice level), little turmeric. Stir and cook for another 5 mins. 5. Add Curd( Dahi) cook for another 2-3 minutes. 6. Add Water ( cook for about 2 mins) then add Souf( Fennel Powder), Shont( Ginger Powder) and Salt. 7. Let it cook for another 5-6 mins. 8. Lastly, add jeera and green cardamom mixture for finishing touch. Cook another 3-4 minutes. 9. Now eat with Rice. Let me know if you need more authentic Kashmiri recipe. - From a Kashmiri.

ANKIT KHUSHU That is the kashmiri pandit version of the dish. The one prepared as part of wazwan has onion and garlic as well as tomatoes, but no yogurt.

Firdaus Anjum Khan , don't put drops or pour water in oil, carefully sprinkle your wet fingers "chita/chitaka maro"(told by someone personally) here chef threw it with small bowl,end of d day he is professional and use bit deep pan n keep dhakkan ready to cover if needed, don't forget to reduce d heat or remove pan from heat for d moment n no shallow frypan..actually d method is correct.

Please don't add water in the hot oil, it is meant for big restaurant cooking by professional chefs and not small kitchens.. I almost burnt down my kitchen. My mistake I should have checked the comments here before..chef u should be more careful while showing such dangerous stuff.. Make people more aware of it.. Very irresponsible!!!

Kashmiri Roganjosh is never cooked with Onions or tomatos. Heat mustard oil and put hinge, jeera, tej patta, big cardamom , small Cardimom, and a piece of cinnamon and mace. Let the oil absorb the flavours of the masalas and let it cool down a bit. Put powdered Kashmiri red chilli powder into the oil and let it absorb the color, now put mutton and bunno for 20 minutes , put some water along with a piece of rattan jyot sanuf powder, ginger powder and cook until meat is done. Put half a cup of curd or yoghurt and let the gravy thicken, then put Kashmiri garam masala for flavour. Done.

@@doreensika837 mutton masala has a thicker , onion and tomato based gravy. It is generally spicier than Rogan Josh. Rogan Josh is focused on the meats natural flavour instead of the spices.

Not at all authentic kashmiri Rogan Josh. In spite of kashmiri red Chilli powder ,the dish color came out to be burnt brown colour. and all the main rogan Josh spices ie javitri, kali elaichi etc u diped in the curry ....why ? u have to grind and let it be in the gravy. and tomatoes? ?? . u better learn what kashmiri recipes really are!

kashmiri mirch is a real thing . kashmiri mirch are more red in color than other varieties . He probably did not know what "praan " is called he called it kashmiri onions . 'praan " are actually shallots a variety of Onions grown in kashmir with garlic like clove structure . they are much more expensive than regular onions .
