Agha Yousef, I greatly enjoy your cooking. We frequently make Persian food at home. It is not easy to find good quality Saffron in supermarkets where I live. They have mostly Spanish ones. A friend used to gift us a small package from Iran and nothing beats that! I am just wondering when you grind the strands and make them in powder form to keep in container, doesn’t the saffron lose its strength? Also, when we make liquid saffron, keeping the unused portion inside refrigerator dries out the liquid. I tend to keep many spices in whole form and grind only when I need to.

Yes it does, that’s why I just do a little at a time. In the refrigerator, it stays ok for a bit. Since I use it daily, it’s too much hassle to prepare it daily :)

Thank you Yusef Jaan, speaking of Saffron, what receipe do you have for Saffron tea? I know some folks add saffron and few other ingredients to earl grey tea but I never found out what else they add. Thanks

Merci! Most people add just a bit of saffron, but some like to add cinnamon stick and rose, & sometimes cardamom to make it fancy. But usually, it's just a touch of saffron.

The ice is certainly not necessary, though you are correct about temp.

@@br5448 correct, but if it's inconvenient, you don't need to worry about adding ice because saffron can handle regular boiling water as you use for coffee or tea.

Yes, you can drink. Ice is not necessary, some think it makes flavor more slightly more intense

I finally bought my mortar and pestle and have been able to grind this gold! I didn't realize how grinding brings up the flavor. How do you consume saffron? I saw you adding some liquid on rice to make it colorful and fragrant before, I also saw you adding it in the grilled chicken marinade. Are there other uses? Can you share persian bread recipe.. I tried freshly baked bread at a persian resort but not sure what its called, maybe lavash? 😊

Yes, I add saffron (in the liquid form) to most of my dishes, and on rice as well. It brings out flavor and aroma, and it's a nice splash of color. The bread could have been Lavash, Sangak, Barbari or Taftoon which are the most popular ones. Sure, I'll add bread to the list but we have such good fresh Iranian bread near where I live that I hardly ever make it myself :) . Thanks for the comment.

Saffron is like gold. Put a very little in it and it’ll do the job, like 1/10 a teaspoon. :)
