Anna cooks up a soft, chewy blueberry muffins. This recipe makes 12 regular-sized muffins or 8 jumbo muffins. Click SHOW MORE for recipe instructions and cooking guide.
Streusel Topping Ingredients:
⅓ cup (50 g) all-purpose flour
¼ cup (50 g) packed light brown sugar
¼ tsp (0.75 g) baking powder
¼ tsp (0.75 g) ground cinnamon
3 Tbsp (45 g) cool unsalted butter, cut into pieces
Muffins Ingredients:
½ cup (115 g) unsalted butter, at room temperature
1 cup (200 g) granulated sugar
1 tsp (5 mL) finely grated lemon zest
2 large eggs, at room temperature
2 ½ cups (375 g) all-purpose flour
2 tsp (6 g) baking powder
¼ tsp (1.5 g) salt
¼ tsp (0.75 g) ground nutmeg
½ cup (125 mL) 1% or 2% milk
2 cups (250 g) fresh blueberries
DIRECTIONS
Streusel Topping
1. Preheat the oven to 375 ºF (190 ºC) and line a muffin tin with paper liners.
2. For the streusel topping, stir the flour, brown sugar, baking powder and cinnamon together in a small bowl. Work in the butter with your fingertips until the mixture is roughly crumbled and no large pieces of butter are visible. Set aside.
Muffins
1. In a large mixing bowl, beat the butter, sugar and lemon zest together, until well combined. Add the eggs one at a time, mixing well after each addition.
2. In a separate bowl, sift the flour, baking powder, salt and nutmeg. Add half of this to the butter mixture and stir until blended. Add the milk, stir well and then stir in the remaining flour until smooth. Gently stir in the blueberries.
3. Scoop the batter into the prepared muffin tin (they will fill right to the top of the muffin cups) and sprinkle the streusel mixture overtop. Bake the muffins for about 35 minutes, until a tester inserted in the centre of a muffin comes out clean. Cool the muffins in the tin for 15 minutes, then turn out onto a cooling rack to cool completely.
Cooking tips:
The muffins will keep in an airtight container for up to 3 days.

Batter was thick, I added another TBS milk - it turned out delish. W frozen blueberries and at 160 F as I used min muffin pan, yielding 24 muffins which were pretty large - ty Ms Ana from Houston

Thank you Anna, for your professionalism and sharing your extended knowledge of baking/cooking. I tried this recipe, and found it made about 14 good sized regular muffins. Filled the cups full and baked-375 for about 30-33 mins. An excellent recipe, as always. Perfect for brunch.

Turned out to be very tasty! One thing though, I had to bake for 34 minutes at 375 and then 6 at 415 to have them cook properly. Depending on your oven, make allowance for extra time

These were a huge hit. I was lucky to get one myself which I slathered with butter. I made the liners with cut-out parchment paper and pressed them over a tin can to fit my monster muffin pan. Flawless recipe. They were cakey, so I imagine you can make a whole 8x8 pan rather than muffins. Think I will next time with a sweet cream cheese layer and throw in some strawberries, too.

The recipes are tested so they know what she needs, when she needs it. Its all set up before filming. In between each step, they cut filming to clean up so that everything is neat for the next frame. I would bet its mostly with the help of production assistants so that she doesn't get dirty with scrubbing and wiping counters, etc. I think its all rather misleading. I would prefer to see a bit of schmutz on her apron or batter on the counter. Realistic, home baking is messy, that's just how it is....and part of the fun, if you ask me. Foremost, though, every good pastry chef has within their nature (after years of practice) the methods of "mise en place" and cleaning as you go. That will keep you relatively clean (though never quite as clean as a TV chef). Read your recipe all the way though before baking so there are no surprises, and have everything ready before you start. It all looks very spontaneous on television, but baking is very much about planning and preparation.

I made this in a square on and the texture...omg 😍 delicious! Only thing I’d do different is add more sugar to the cake mixture. Anywhere from 1/4-1/2 cup more....maybe 1/3. Even though it’s a little under sweetened, it’s still great with coffee! Will definitely make again!

Great recipe, I would only suggest auto not to add all the flour as per the recipe: add 300 gr of flour first and then add some more (20-40 gr) if needed, otherwise you risk getting a very thick dough which is hard to mix after adding blueberries. Also, if you intend on making smaller muffins, make more of the topping.

Hi Anna, I love your channel!!! I tried this recipe and followed your video but the texture was not the same as yours... I even added some sour cream and a bit more milk in the end as I could not mix the mixure as it was more like a dough... no idea where I went wrong... taste is nice but the berries are all sinked to the bottom...

I just made this following the gram measurement. The batter was so thick! :( Then i realized the gram conversion is wrong. 2.5 cups of flour should be around 320g, instead of 375g. Please check before you follow this recipe.

according to google, 2.5 cups are around 10 ounces of flour. 10 ounces are 283 grams of flour ¯\_(ツ)_/¯

2.5 cups is 300g. 120g per cup of flour so 120 plus 120 plus 60. 375 looks more like three cups

I have a question, although it probably won’t be seen because of how old this video is. In the written recipe, it calls for .75 tsp of baking powder and .75 tsp of cinnamon. I thought .75 tsp was equivalent to 3/4 tsp, not 1/4 tsp. Which is it, please? This is a fantastic recipe and I’ve made it at least twice (without the streusel topping). I’ve had success with just about every recipe I’ve tried from Oh Yum! I just have to make sure the weight conversions are correct. I noticed the all purpose flour measurements were off and I had the same problem with the pancake recipe. It was written using not enough flour and the batter was too runny. By no means am I a professional pastry chef, but I’m a very experienced baker and have been doing it since I was a little girl with my mom. I’m now 48 so I think I’m entitled to say I’m very experienced 😂 Thank you!

Dear Anna, I absolutely love all of your recipes (including this one), and always, always search for them as a first choice whenever I want to try something new. It's just I read a lot about muffins vs cupcakes, and everywhere I looked so far (but here) it is said that they use vegetable oil instead of butter - and that would be one of the biggest differences (other than buttercream frosting, obviously). You see, I'm getting ready to Afternoon Tea event I decided to prepare all by myself, and all the cakes I chose for the event will have butter in them, so I was happy to find something, which is not - just to add a bit of "diversity" into my menu, and, naturally, went to search for your recipes - and lo and behold - you are using BUTTER , rather than oil. Just curious, why? I personally HATE oil, and ALWAYS use butter. This is the only occasion I deliberately was searching for recipes without butter - and still fit for the Afternoon Tea. Will be happy if you drop a line, shedding a light on this delicate subject 😊

Hi I have tried this recipe a few times and has always turned out well . Thank you . However once I switched the blueberries with chocolate chips and the muffins turned out a little dry. Should I have reduced the baking time or temperature while using chocolate chips ?? Please let me know.
