My experience making madeleines: It is true that by allowing the batter to rest for an extended period in the fridge, even overnight, does give them much higher bumps after baking. And about the moulds, I have the same rubber moulds as yours and they were really fiddly to use as you have to have a tray underneath it to give it support and have it flat, if not, it will be wonky on the grills. It really isn't ideal. Also, it will just start sticking like hell after some time, even if you conscientiously butter n flour the mould. I have used some metal ones too. It also stuck to the metal ones as well even though it was non-stick and I still buttered and floured it. I have seen some chefs use really thick metallic ones (not sure of the metal, but they were gold-ish in colour). Also, instead of butter and flour, they used a mixture of flour, and I can't remember what exactly and mix it into like a glue. It seems to work for them. I remember it didn't quite work for me. Anyhow, I might try it again when I get a better mould. I should just plonk the money down....sigh~~~

@@julienpicamil Indeed. I just did a check. The mixture for the pan/mould was made up of shortening 1 : vegetable oil 1 : cornstarch 1/5. Maybe I should give this another go if I am using a metal mould.

Those are nice Madeleines Julien! They look like tits to me, haha!! Perhaps 50-year old ones, not 21-year old perky ones, lol. It’s all good though! :D I bet they are delicious with lemon.
