I've read that Christmas puddings were traditionally started in January to be ready for the holiday at the end of the year, so the flavors keep developing over the months. You say your pudding will last til next year, so I assume I can cook the pudding at the beginning of the year and then keep it stored? Should we keep it in an airtight container? In the fridge or on the shelf? Is there anything else I'd need to do to ensure it comes out well?

It is very Simple, I have done it many times, I often make 2 or 3 Puddings, keeping them until next year, allowing them to improve and storing is super simple, just leave the Foil on and store it in a cool dry place, larder cool cupboard etc.. not the fridge, it's too damp and can contaminate food.. I try to urge everyone to try this, it's amazing and fun, just don't over think it, I have kept puddings in the past for 2 years with no issues but 9 months to 1 year is optimal..

thank you steve for the wonderful recipes ive watched your recent one from 2020 and this one. i hope i get to make this sometime in the future. recipes take me back to the past now. i think about how people lived a long time ago. poor, rich and middle class. and they celebrated the winter festivities, with a traditional xmas pudding or figgy pudding.

Just wanting your thoughts please. I made this pudding yesterday but this morning I realized i forgot to add the breadcrumbs!!!! It looks and smells wonderful of course but just wondering if it will have any significant affects? Should I start all over again?

It'll be fine, a little more moist but it's not as if you left out the fruit.. Next time though try and remember.. If it were me, I would make a couple more, they will be so good to eat in 2023 or 24 even.. Trust me.

Enjoyed your Christmas pud. Show again! I have made them for many years and just finished making 4, one great pudding for my family and rest to share. I use Phillip Harben's old cookbook. Adapted to my family. This year I had a couple of cups left and hated to waste all that goodness. Threw it in the frying pan and oh my! That will be planned for next year! Merry Christmas!

Here is from Brazil, Have you already done a test of baking the pudding in the oven for 40 minutes? I did it and it was perfect without having to spend so much time cooking in the pan. only 40 minutes and it was wonderful. I love this wonderful pudding

You can make it any time, I like to make it 2 years before eating but a few months is OK too..

I made the Pudding last Tuesday according to your recipe and it looks and smells AMAZING! I gave it its first Brandy feeding yesterday and wrapped it up. I tagged you in my Instagram posts. I do have a question, when I Re-steam the pud for service, should I put it back into the basin or leave it in the parchment paper/ tin foil wrapper and steam it that way? I should Probably say the reason why I always flame my Christmas Pudding, like pulling a chair out for a Lady, or not walking under a Ladder, they are not essential but traditional. Flaming the Pudding makes everyone feel good, it looks exciting for young and old and it lightly flavours the Pudding. I am sure it has some deeper Pagan meaning but we do it just for fun.. :)

I always thought it was interesting how pudding in the UK means a spongy type cake-like thing and in America pudding means a kind of custard-like thing. lol I've never tried the UK type pudding though I think I might give it a try this year. Thanks for the recipe.

Suet is hard white beef fat that comes from around the kidneys and organs (not just any beef fat). Suet has a high smoke point as well as a very high melting point compared to other animal fats, so it doesn't begin to melt until late in the cooking process. It's an essential ingredient in many traditional British recipes, both sweet and savory, and you should try to avoid substitutions if you can. You can get suet in the meat department of your supermarket, although you may have to ask for it. Suet does not need to be rendered before using. Unless your butcher grates it for you, you will need to grate it before using in recipes.
