Hi Haniela, your rose are just perfect for me. But i have met some problem for doing this roses, as my royal icing texture tends to be gritty or grainy after i make it and store in refrigerator( in air tight container) so it makes my roses looks "gritty" rather that a smooth pedal. Therefore my question is, is it the icing uses to make royal icing roses must be fresh from the stand mixture?

Nisha Nataraj it stays stiff unless you crush it. These roses will store pretty much indefinitely, if stored at a dry location.

walker dunc Thank you. I'd say practice, not just the roses but in general use the petal tip to decorate cakes cupcake, to get better feel of it. Perhaps starting with a large petal tip would be useful too.

Maria Angelica Nolasco If you can do that you certainly can, I'd probably suggest using buttercream instead of royal icing, unless you plan on using these as decorations. If you plan on making these small, you'll probably need to make them like I show in the video, it maybe a bit difficult on a cupcake.

Did you thin down your royal icing to make the easy flow , or did you use it right after making it ..stiff consistency ??

I usually make my royal super stiff, I tend to thin it just a tiny bit to medium stiff. Just so I can pipe it without getting a carpal tunnel from pushing on the bag too much.

Anne Nelson Hello Anne, I think it was 102 or 104. I'll have to check the number on the piping tip to be sure. But it is one of the smaller ones for sure.

chantal cropley it has to be stiffer than 15 or 20 sec. to hold the shape. Medium stiff works great. Icing should hold the peak.

You can use 101, 102 103 etc. For tiny roses I recommend petal tip 101

They're basically sugar. Once dried, there's not any bacteria or anything that can grow on it. Bacteria needs moisture. I'm not sure how the whole 'egg white' part of it works though honestly.
