We're going back to basics. What is mirepoix? Aromatics such as onions, carrots, and celery are the foundation for many recipes because they are the fundamental building blocks for flavor. This is so universal it's not just for soups and sauces. Toss it on a baking sheet with some chicken, turkey, game or beef bones and roast it (I'd add garlic though too). Toss it in a frying pan with some chicken thighs, garlic, flour and stock, and you have a one-pan meal to pour over either roasted or mashed potatoes. I could go on and on. This gets used literally in so many dishes, there is not enough space in here to list them all. 101 YUM!

I remember my granny making this with chicken stock when I was about 6 it made the kitchen smell so good,that was 55 years ago,it's obviously has been around a long time.

Yes...we use it for all of our pot roast fixings. If we decide to make a gravy, we'll strain out the mirepoix and use the broth for the base to make a roux.

I’d eat celery any day over cooked carrots, and I would lean more to the side of the holy trinity because it doesn’t have carrots. In my opinion carrots should be eaten raw the flavor changes to something that I don’t like when cooked

i always wondered why people from louisiana called the veg mix mirepoix when its not a traditional mirepoix like this video, the confusion is gone! i still wonder how cajun mirepoix became what it is today?
