Seasonal ingredients are regularly added, however, tofu and wakame (seaweed) are one of the most common. If you've never made miso soup before, perhaps now is the time. It's one of the easiest Japanese soups you can make. You can eat it for a Japanese breakfast, lunch or dinner!

I made this recipe an hour ago. I didn't have Dashi and substituted a vegetable bullion cube for flavor. I liked it. Not traditional but tasty enough that I would make it again.

Will you show or tell me what paste you used and what the container looks like same with dashi? I was looking for dashi granules but I don't know what they look like!

So simple , so easy, and such a comforting taste !! When I started to "attempt" cooking Japanese dishes, I always avoided Dashi thinking it makes no sense to add such flavor. A friend of mine who's a chef yelled at me and told me I should. And WOW , I never expected the difference the Dashi made to the soup. Lesson learned: follow the recipe 😆

You start with Dashi. When i soak my dried kelp (kombu dashi) in water am i making Dashi? If so i use 1L water and 10g dried kelp. Is that ratio good?

I have only used instant dashi, Hondashi, when making miso soup. How much of a difference is there between instant and homemade dashi? I look forward to making your homemade dashi recipe. Thanks

in general a good starting point is 1 cup dashi - 1 Tbsp miso paste

Yes! It will keep for 2-3 days if kept chilled, however reheating miso soup brings out a sour flavor, which disrupts the flavor balance.

Can I put the dried wakame directly into the dashi without soaking it first?

Hi! Dried wakame must first be reconstituted in water, after which it can be enhanced in color and texture by immersing it in boiling water and then dipping it in cold water. Instant wakame can be used in soups and simmering meals right out of the packet. Does that help?

@@alldayieatlikeashark Ah thanks so much for your reply. That helps. So in this case, after we have reconstituted dried wakame in hot water just drained and put in the boiling dashi stock. No need to dip in cold water.

I can't find miso and dashi in any stores in my area, nor online (Amazon and eBay do not ship to here) Is it safe to make it at home? Never attempted making something like that before so I'm quite scared of poisoning me and my family by mistake 😅😅😅 do I worry too much?

You are probably worrying too much :) But you will need something like koji to make miso. Would that be easier to find rather than miso?

Is soft tofu the same as silken tofu?

hi Lindsey, there are two kinds of tofu the regular tofu and silken tofu. both kinds have 3 types- firm, medium and soft. the silken is much creamy, jelly, and silky texture. the silken tofu's soy milk is coagulated without curdling the milk. it's soft and delicate to handle. you don't need to be press it. the regular tofu is also know as block tofu and can be found easily to the grocery stores. this is also the type of tofu that needs to be press. :)

Hi! If you have the ingredients, you can make dashi. It's also available in Asian supermarkets and online stores such as Amazon!

Isn't dashi basically the broth or stock of the miso soup? Dashi can be made from Kombu a type of Japanese kelp or shitake mushrooms🍄 or you can use the dashi powder. The Dashi i found at 99 market had MSG which i understand is really bad for our bodies.

@@melindasanz4300 MSG isn’t actually bad for your body, it’s flavourful and used as a flavour boost in many recipes such as in Indonesia and Japan. Of course having too much of it can cause problems but so can having too much salt, MSG is actually lower in sodium than salt is so it’s a good alternative if you want good flavour but less sodium

@@alldayieatlikeashark Very much so. After working from home for almost a year I have missed my favorite lunch spots and Miso was always a great side. After watching your video I ordered the basics and can't wait to try making it. Just need to find a good place to buy Tofu since Amazon reviews seemed shaky at best.

I think it depends on what paste you use the red one is more salty and pungent where as the whitish yellow is more creamy and sweet.
