That looks so good. Finally, I see how to use miso properly. QUESTION: I recently learned how to use shredded king oyster mushrooms to create a meat-like filling. Do you ever use your stalks for anything, or do you just throw them away? 🌹

I normally just throw it away. I mince it and put it in meatballs and such only when I feel like it 😉.

SO GOOD!!!!!! I had a bunch of these mushrooms around, and I wasn't sure what to do with them. SO GOOD! I went with noodles instead of rice, but both would be amazing!

Thanks for the upload. It looks to me that in the japanese cuisine it's not common use to stir mushrooms or vegetables before pouring the broth in order to trigger the Mailard reaction. Is it correct? Still very interesting. Here in Brazil, we stir the ingredients in oil, garlic and onions before adding the broth. Would this procedure spoild the umami flavours of the mushrooms? I really love sauté shimeji, but maybe i've been eating it wrong all along. Best regards, as always.

This was great, I was looking for a "different" Mushroom Soup recipe and now I've found it, this is a last minute dinner, I DO have some packaged Miso Soup Mix, I have some dried and fresh Mushrooms...but I'm going to make this "Western" too ... I'm going to make Grilled Cheese Sandwiches to dip into the Soup, I'm thinking Sourdough Bread with Smoked Gouda might be pretty tasty. PS: Those Red Cabinets are AWESOME

@@asakusa-tokyokitchen This recipe has a lot of mushrooms that are very expensive where I live, so the thin Miso base and a lot less mushrooms leaves a lot of Soup, so the Sandwiches make up for lack of mushrooms...this was also the way the Europeans ate Soups and Stews WITH Bread centuries ago. Americans made Grilled Cheese Sandwiches for Soup Dipping. We've also dipped Egg Rolls and Chinese Dumplings/Potstickers into Soup...it's all about filling the "tummy" and still tasting great.
