Mix the molasses with the hot water. Serve for breakfast with eggs scrambled with melty American cheese, a side of canned or fresh apricots. Healthy!

I switched the molasses with honey and. I think it came out tasting better than when I tried it with molasses.

Yes, your personal preference. I'm going to try both options then do a taste test. I'd rather try the old recipes than the newer ones.

Each has a different flavor. Molasses has a mild caramel earthy taste to it when honey, depending on honey type of choice will taste different but both are sweet. Whatever you choose keep in mind that swaping to honey means you will have to reduce two things.. amonut by a 1/4 because it is sweeter and reduce baking time because honey bakes fast. Acacia honey is best to use for baking, it is mild-tasting has a vanilla-like smell and taste as it is lighter in color and texture.

Good recipe. Simple and easy. Only change I would make next time is to reduce the molasses by 50%. The molasses flavor was quite strong and a little overpowering.

I got the same result. It was so overwhelming, I had to ditch the whole gingerbread. Just too much of a bitter molasses aftertaste. So glad someone else found the flavor overpowering. Thank you for your comment, wish I had read it before I made mine..Will try again, but with less molasses.

Omg thank you...saved me from a disaster... even less is good... I'd say 30-40%...and it could be sweeter...but I think I will glaze them. Other wise good cake recipe.

If u don't have molasses u can use honey..but it would be bit sweeter so it's better if u reduce the sugar,nd also the colour will be not dark like it is in the recipe.

Do you have to make any adjustments for High Altitude ?( I live at 6700 ft above sea level!) I don't usually bake cakes from scratch very often.

I use all ingredients but the texture doesn't come out like this. I wonder why? How long do you bake gingerbread for and what temperature? Is it 350 etc. I use a toaster oven. My regular oven works but I find it very confusing to use. I don't know if that's the reason why

Sure, but why? One cup of white granulated sugar plus one tablespoon of molasses equals one cup of packed light brown sugar. Why bother with brown sugar when the cake already has a whole cup of molasses in it?

A springform pan will work, Susan Susan. To accommodate the same amount of batter, use one that's 9-inches diameter. You may also want to wrap the bottom in aluminum foil to ensure the batter doesn't leak out in the oven, or place the pan on a baking sheet.

instead of using coconut oil, try whipping shortening. the oil can't hold air bubbles but the shortening can
