Pad thai may seem like a dish better left to the experts, but we beg to differ: with a little bit of prep work, and a dash of know-how, it can be - and should be - made at home. Still anxious about trying your hand at this Thai street-food favorite? We enlisted the help of chef Jet Tila to walk us through the process; watch the video for his tips and tricks.

4 tbsp sugar, 4 tbsp tamarind paste (read: 1 tablespoon of the actual paste mixed with 3 tablespoons of water) 1tbsp lime juice 1 tbsp white vinegar, 4 tbsp fish sauce, 1 tbsp chili or paprika, stir tgt. Can be done ahead of time. Oil into pan (never olive oil in asian food pls), 1 tsp dried shrimp, 1.5 tbsp pickled radish minced, stir fry. 1.5 cup baked tofu diced, 1.2 chicken breast cut in strips, 8 fresh shrimps prepared, 2 eggs, dont scramble the eggs, let it stay in teh sides, only blend it gently when it is starting to cook. Use noodles same as the pho noodles into pan when the the proteins are half done. stir fry. Sauce into pan. 1 cup bean sprouts. 4 green onions in short chunks, 1/4 cry roasted chopped peanuts, stir fry tgt until the sauce is not in a pool anymore, then serve with more raw green onions and bean sprouts and peanuts.

+habibiahk I've watched this like 10 times, where do they explain the Tamarind sauce being made up of 3 parts water to one part Tamarind paste?

+Dan r it's said in another comment AND from the look of the tamarind mixture they used you can see it is very watery - if you live in Asia, you will know that when you buy tamarind paste it is very very dense. So you should dilute it. The chef in the video assumed that it is common knowledge so he didn't say so but you can observe it :)

So in the video they show that is Rice Vinegar. then when they add it to the bowl its showed White Vinegar.. Which one is it? Guessing that there is a taste difference in the two.

I found this out the hard way. Apparently it is common knowledge that 1 part tamarind paste must be diluted with 3 parts water. So when the recipe says 4 tablespoons of tamarind paste, it really means 1 tablespoon of the actual paste mixed with 3 tablespoons of water. That is why the color is much lighter in the video. DO NOT add 4 tablespoons of actual tamarind paste to your sauce; you will ruin your pad thai because it is overwhelmingly sour.

Lauren Godfrey Oh my gosh, I made this last night and while it was good, I felt the sour was overwhelming. I didn't dilute the tamarind paste! Wish I read the comments before making it.

+Lauren Godfrey It all depends on how much noodles and meat you add. I use 8/8/8 fish/tamarind/sugar and it tastes amazing! This is a full pack of LARGE noodles, 1-2 chicken breast, 2 eggs, lots of bean sprouts, green onion, garlic, carrots. Comes out perfect every time! It def will be a bit sour but adding hot sauce after will balance it out. If you don't like hot sauce you will have to lower the tamarind count, all depends on your taste buds!

+Hi it's red color comes from a ton of paprika. totally optional 😉😉 when I want my food to look good without being overly spicy thats what I add.

Jet made it all seem so easy! One thing I like to do before digging in, is to sprinkle in some of those reserved bean sprouts on top and squeeze on a little more fresh lime juice, mix lightly, then eat! That last little touch seems to make a big difference!

Here is the list of recipe guys; www.popsugar.com/food/Pad-Thai-Recipe-Video-32238465 I followed the recipe exactly. Here is my opinion; - Use 3 cups of noodles not 4. The ratio between the sauce and noodles is not even. I used 4 cups of noodles and when I was cooking it, the sauce did not cover all of the noodles. Mine wasn't very saucy. I like it saucy - If you like it sweet, use 5 tablespoons of sugar. I like mine sweet, and this is a good ratio - Don't use Sriracha if you don't like it spicy like me All up, I recon I did a pretty awesome job my first time. My brother liked it too! Easy recipe! Now I don't have to pay $15 in a Thai restaurant lol

I love this presentation with Brandi Milloy & Jet Tila The Pad Thai Recipe was amazing! I made it for dinner this evening and I loved it! My daughter also liked it. The only thing I would add is that my noodles were a bit too Al dente for my daughter but i loved it! Thanks for all your help with this dish.

I'm. Laos and I've always wanted to learn how to make pad Thai. my mom makes Kua Mee (stir fry noodles) and it's so good. I will have to try this one day!! thank you much!

I made this recipe last week. The result was awesome! I had pad thai in thailand so many times and that one was exactly the same. I didn't put any shrimps or chicken cause I'm vegetarian..but wow!!!

Thanks, tastes great! I couldnt find shrimp flakes or pickled turnip, so i didnt use it. And it still tasted good. I used cashews instead of peanuts, and added broccoli, great taste!

I was sticking to the one pot pad Thai because I can't cook:)) where you cook the noodles beforehand and put them in a separate bowl and mix with a bit of sesame oil. Scramble two eggs in same pot and put them in another bowl. Pan fry a diced chicken piece until pretty much cooked. For the sauce, 1/8 cup of fish sauce, rice vinegar, soy sauce, lime juice , sugar and sriracha. Fry shallots then put in noodles, egg and chicken in pot and pour in sauce. Add sprouts, onions and peanuts. I'm so bad at cooking everything up together...but this helped a bit. I'm going to try this recipe, hopefully I don't mess up lol

It is really important that the peanuts be roasted! He mentions it in this video but several videos or recipes I have seen don't mention it. I find raw peanuts to be kind of unpleasant in pad thai or at the very best, don't add much. But when roasted, it gives them the right crunch and a great flavor.

I just made this! I made a vegetarian version instead. Here's a couple of things I did differently in case you want to do the same. I bought a bag of brussel sprouts (pre packaged). In a large wok I used an entire bag of rice stick noodles (i think he uses a lot less) and I also included the entire bag of brussel sprouts at the end when he "puts them to bed lol". So instead of a little bit of tofu, i used an entire pack of extra firm tofu (i didnt buy the baked version) and i cut them into small little cubes. The tofu i used is in the shape of a brick (so not the large packettes). You definitely need to increase the amount of pad thai sauce u make. I ended up putting 2.5 table spoons of tamarind and 8 tablespoons of water to dilute the tamarind so its more liquidy. I used 5.5 tablespoons of sugar, the same amount of vinegar he put in, and about 1.5 tbsp of lime. I dont eat fish sauce so instead i substituted for soy sauce. Initially i used 4 tbsp but it needed more so i added 2 tbsps to the entire dish. Im not a fan of super salty food so you can add/remove as you like. All in all, this dish made about 6-8 servings. I kept 2 eggs in it which i found was exactly perfect in my much larger portion (you could do 1 more if u want but not necessary). I hope this helps! Over all its really tasty -- i would say next time im going to add more veggies like bok choy, broccoli and some round sliced carrots. THANK YOU to all those in the comment sections that said to dilute the tamarind otherwise i would have never have done that!

I made this (using Lauren Godfrey's tips in the comment) and it was really good. It tasted like restaurant pad thai. I left out the pickled radish because my store didn't have it. I really thought I wasn't going to like it because it smelled like vinegar but it tasted nothing like it smelled, thankfully

I definitely agree about the ketchup...blech...they use it cuz the dish is a little sweet usually but NO! I would probably use some dry ground chili powder too instead of the sriracha, and serve lime and some chopped fresh thai chilies on the side.. Thanks for the recipe!

Not positive here but I’m guessing there are a couple of issues: 1) in Thailand they use palm sugar. Really imparts that specific sweetness you taste in Thai food and I’m not sure why Jet doesn’t use it. 2) I don’t think putting sriracha in pad Thai is very common even in Thailand. 3) the traditional sauce doesn’t have lime or rice vinegar in it, just tamarind, fish sauce, and palm sugar.

But for the palm sugar, I can see why he didnt use it. it is probably hard to find in america and also hard to use. they come in solid cup-shaped block which should be shaved by a knife before using and after all these troubles, palm sugar sweetness isnt that well pronounced in Pad Thai. also, we dont add lime in the sauce because when heated, it will taste a little bitter. However, it is commonly served as a garnish. I think he's just making things simple for home cook. it's easier to balance the flavor to get that YUM he's talking about this way too

My only issues was I didn't make enough sauce for the amount of noodles I had. I basically did the recipe 1.5x and should have done 2x. It was good, I will make it again. I wouldn't mind using palm sugar instead of sugar.
