Small tip for this pasta: give it a little touch of lime (just 4 drops) and fresh mint from the vegetable garden. This, along with the broccoli, gives it a rich sense of flavor (The mint leaf is full of important minerals and vitamins for the body). With this combination you have simplicity and extra healthy

Not a week goes by without eating pasta e broccoli, but being originally from Puglia, we make it with orechiette. The recipe is exactly the same, although sometimes anchovies are added. Saluti dalla Svizzera.

I like cooking tajine and other morrocan dishes too since I was there for holyday (indeed i have 3 clay charcoal fired tajines, one for me and the others for lager amounts/guests) . And thai and indian and mexian. Each cooking tradition is amazing, if one tries to do it the authentic way (fortunatly Internet allows to get the ingedients...)

in Puglia (Italy, South East) we do the orecchiette pasta with broccoli, sautéed anchovies, evo oil, garlic and chili instead of pecorino cheese. Try it, it's delicious.

You don't have to do it, just use less heat ;) I think this works because as water evaporates it cools down the pan and the oil. Since it evaporates at around 100 Celsius degree it is low enough to prevent the garlic from burning.

@@pavel9652 You're technically correct, but missing the point. If you use the water, it will ensure that your pan temp remains around (wait for it...) 100°C. Dead nuts reliable, no gadget required.

It is not necessarily true on a large pan, since it might have colder and hotter spots, depending on the distribution of oil and products on the pan as well as the heat source. Check it with an IR thermometer or FLIR camera if you have the gadgets ;) Mixing the water and hot oil, in general, is not a great idea.

I'm Italian from Calabria, and my mom always makes this dish. It's something divine! So always but delicious! Now I've been living in the UK for three years and I miss the taste of broccoli from here grown in Calabria. They have a totally different flavor and definitely better than the ones I find here. In Italy the food is much tastier and more genuine!

Love this dish, my Family has been eating this from childhood. My grandparents on both sides are Sicilian. My Mother always made it especially during Lent. My Mother added more garlic. She used Romano cheese.. yummy. If she didn’t have enough Romano cheese, she made poor man’s cheese, by sauté garlic in extra virgin olive oil, adding breadcrumbs, and what Romano cheese she had, black pepper, pinch of salt to taste, fresh Italian parsley. Buongiorno!! I'm not Italian but was trained by Sicilian chefs when I was an apprentice. We often served this in smaller portions as the primo. I personally found a splash of *freshly* squeezed lime went down a treat. Thank you for bringing this beautiful dish to so many people!

This has become an addition to my rotation. Healthy, filling, cheap, not exactly well balanced but delicious and makes me actually crave broccoli. If you haven't tried it, make it. It's legitimately worth it. What I tend to do, to produce less mess, is half fill the pasta pan, fill another, smaller pan and put the broccoli in the smaller pan with half the salt. Then drain it over the pasta water pan. Not as efficient really but much less finnicky and easy to mess up. I should probably put less salt in it, but it does need some good salt, so don't be afraid to put a good amount in. Love it.

Pasta with broccoli is one of my favourite dishes, I think Fusilli or ruote are better than spaghetti in this case because little broccoli pieces and so on get stuck better in them. Sometimes we also like to put a little bit of peperoncino or anchovies paste/anchovies in oil

Dear Vincenzo, Thank you for this wonderful recipe! Growing up, every Monday (when everyone was tired from work and school, and nobody wanted to cook) my family would eat steamed broccoli, with store bought ravioli and sauce from a jar. We used good quality ravioli and prepared sauce, but it was only so-so because we did not have the right techniques. I made this pasta for myself today after a long day of work, with a small salad of basil and cherry tomatoes. I used organic alce nero brand spaghetti, the best I can find here in Thailand, and a whole broccolo for one person, so there was more broccoli than pasta. Otherwise I followed your instructions exactly, and it was a perfect, simple meal. It was so healthy and light that I went to the gym an hour after eating, and even while doing 40 minutes on the treadmill my stomach was feeling great, not even a little bit uncomfortable. Thank you for changing the way I cook and eat, I tell everyone I know to watch your videos! Ciao 💜

That was my original pasta broccoli recipe. You have to try it with lemon. It's really good. I use half a stick of butter, 1 or 2 lemons with zest, and half pound of pasta. It taste really good. Lemon and broccoli go together so well. My mom use to make broccoli and put lemon, salt, and pepper on it. So simple and good.

I just tried Vincenzo's version and noticed that it was missing some acidity, maybe the pasta water was a bit too salty. I also immediately thought of lemon but had none in the house. A little bit of light red wine vinegar had to do and it does work, gonna try with balsamico too. But the freshness of lemon would still be better.

This was a staple meal growing up except we add chopped basil and parsley, a bay leaf and a little crushed red pepper to the broccoli. Many Calabrese dishes are vegetarian. Nicely done!

This has become one of my wife's favorite pasta dishes, she loves broccoli and she sometimes did a simple dish stir frying it with garlic. This just added a few more ingredients to that. I usually cook my pasta with 1,5 - 2 tbsp of salt in about 4L of water, but I feel that 1 tbsp should be enough here, since both the broccoli and the pasta will take some of that salt into the final dish and with the cup of pasta water it might get too salty.

My grandfather was from Bari so my mom made this for me while growing up. I love it. I season mine with pecorino romano cheese with a nice squeeze of lemon. Yummmmy.

@@vincenzosplate Just made my first plate of this recipe and wow! As I assumed it was love at the first bite :) Unfortunately I had to take Parmiggiano Reggiano to grate into it instead of Peccorino because they only had it with pistachio and I do not like this fancy stuff at all. (oddly they had about 12 sorts of Parmiggiano and ONLY this one "Peccorino"..) I could have tried it with Manchego instead but I wanted to keep it italian. Still a great dish and easy as 123.. and cooked with love and a bit of the pasta-water it was so "yummy".. I almost boiled my tongue because I could not wait to eat it :)

Looks great! When I cook pasta I also almost always like to add crushed nuts, like cashew or pine nuts, they add a great taste and are healthy;)

My grandparents were all born in Calabria. We often had this as a Friday dish. Mom always used medium pasta shells with the broccoli. The little broccoli buds will nest inside the shells. I love it!

I tried it, it’s really good 😋 plus it’s a really great on budget recipe as well, although i think adding just a little bit of lemon juice would really help to balance the dish and make it refreshing

We ate this every xmas eve at my grandparents. My dad's entire family is from Catanzaro and half of my moms family, so this is a staple. We still eat this weekly and whenever I cook for friends it's one of the dishes I make, because they've never even heard of it. Its so simple and so delicious. We have two ways of doing this. This way and the other way is we add home made hot Italian sausage to it. Its amazing. Edit: in my opinion the right cheese makes it. When I dont have peckorino I use real parm.(don't hate me) But peckorino is where it's at. We also always add pepper flakes.

We always do this at home! The only difference is that we use Penne Rigate, we cook whole garlics with a couple of dry red peperono slices very very slowly until they caramelize, and we use breadcrums instead of cheese. God bless pasta with broccoli

I can go either way but the shape of the pasta sometimes is vr important so I hear you. Chilli flakes a must!!!!!

In fact very few people in Italy use spaghetti. It is mostly penne, fusilli and farfalle that are used for this dish. Some people put one or two pickled anchovies (acciughe sott'olio in Italian) in the olive oil. Don't worry they will melt in the oil and give it an amazing (not fishy at all) taste

Melt an anchovy in the oil first and add some chili flakes with the garlic for the Sicilian version. Trust me.

My grandparents are from Bari, and we make a version of this. We add some anchovy and a little bit of tomato to the garlic-olive oil mix. They also use Rapani if it is in season. It is one of my favorite dishes, and I just made it a few days ago.
