It is handy :) But wait till you end up having to make it using the cups, tbsp, and tsp measurements, but not to American/English standards :P Here in Australia, a cup is 250mL, a tablespoon is 20mL, and a teaspoon is 5mL (This is about the only measurement that is standard between American/English and Australian).

@@isas3108 Not really, just takes a little more work to convert non-Aussie recipes to Aussie ones. The teaspoon is a common size, so 3 teaspoons = 1 american/english tablespoon.

My family has always used a marble slab to stretch it after cooking! (And a pinch of nutmeg!) You can sometimes get a marble slab at nice cooking stores. A cost-friendly alternative we've also done is purchasing a slab of marble from folks who make headstones!

Oh my gosh, I had no idea that there are 2 different types of corn syrup--plain and high fructose! Wow. And this is one of the reasons I watch your videos! Love the recipes.. I made your pecan pie recipe and it turned out well, albeit dense. Love the videos. I love your kitchen, holy cow but what a kitchen. A suggestion, please take the vanilla beans from the jar and use them again as a single fold (if what's in the jar is a double fold.) The beans will definitely mold after having been out of booze for a while. What you could with the beans is make vanilla paste, or vanilla sugar, or grind up very fine and use it as a spice. So many things but the exposed beans really caught my eye.

John, you are amazing! I love your recipes. One BIG question I'm at 7k feet elevation and made this peanut brittle. I had to stop cooking at about 285 because it was jjjust starting to burn. Brittle turned out great...but a little too thick. What should I do to insure the best Brittle. Thank you!

You could look for a microwave recipe. I have been making peanut brittle in mine for decades. It turns out exactly like a stove top version and requires way less watching and stirring.

I followed this recipe exactly as stated and I can't believe how perfict it turn out. Just a bit confisued when you call Baking Soda and refer it to Baking Power a couple of times. I had to assume you ment Baking Soda as I checked out other recipies and they all used Baking Soda. I am so impressed how glossie it turnen out.

I make it in the microwave and the timing is exact between adding each thing, so only stirring in a few times and it is done and no candy thermometer needed. It works out every time. Nice to have the stove version too.

Peanut brittle is an essential part of Christmas meals in Argentina, where I live, but the commercially bought kind is always too hard and too artificial tasting for my liking. I'm going to make this myself this year and see how it turns out. Plus, since Christmas is in summer here (and it's like 95 degrees out), it's something I can make quickly without using so much heat (I tried making Christmas cookies one year and nearly died of a heat stroke lol). Thank you for the recipe!

My mom made the best peanut brittle. She cooked it til it was done, used only raw Spanish peanuts and stretched it out till it was very thin and crispy. It never stuck to your teeth

That’s the way my Grandmother used to make it, and I still do! LOVE nice and thin Peanut Brittle. He recipe came out of a cookbook that was published in the 1920s.

Hey John, I really love your videos! I know it might sound silly, but I’d love to see a video on how to properly cut and place parchment paper in a pan. I use silicone liners, but sometimes they don't fit perfectly, so I end up using parchment paper. However, I can never seem to get it to fit just right, especially with pans that don't have sharp edges. Another fun video idea could be about how to tell if a recipe is prone to overmixing and what ingredients you can mix or whip for longer periods, like butter and sugar. Anyways, thanks for the delicious recipes!

My dad loves peanut brittle and I used to always make it for him but the recipe I used was way too fussy. I can make this one tomorrow for him. The recipe I used to use made me find and shell raw peanuts. I think this would be delicious with honey roasted peanuts

My nuts added were pre salted, forgot as some suggested, a little vanilla 1/2 t sp may be, didn't habe a thermometer, bit of trial and error, 5 minuets boil, it's takky, i put toffee tray in the fridge, it's fine line between over cooking, burning and exaxt right timing, I kept stiring sauspan keep it from sticking to the bottom and burning. I know I need to follow this man's recipe, im one of a close enoughs good enough, should of seen my season stuffing of a baked chicken new years eve 2024. Hi John; would you, if possible, give some tips on how to guess at temperature without a candy thermometer for this recipe (peanut brittle)...I checked the food network recipe and they didn't add the butter and nuts etc until after reaching the hard crack heat...yours seems right. I love your kitchen and the gorgeous copper pots collection. I just have one (for sauces lol). I haven't had peant brittle in many years...this is great. thank you & happy 2025 from YOW

Yes, all candies technically need to be adjusted according to elevation. A Google search will tell you how much to change the temp. I also run a dehumidifier when making any candies, whether this or divinity or what not. Humidity is divinity's arch nemesis

What candy thermometer do you use? I tried this recipe; delicious! Unfortunately my candy thermometer took too long to get to 305F in the final boiling (after peanuts added). So it was rock hard. But I put it in Tupperware and it softened a little. If you could have given us the tip to remove it from heat immediately at 305F that would. help too. I'll give it another try, maybe buy a different candy thermometer.

This looks so good! Over the years I often made caramels for gifts, but sadly can’t eat them any more. Here’s a thing, I haven’t found a good candy thermometer! I’ve tested in boiling water, they never seem to hit the correct temp. Use one for jam, but I know it’s too low. Burnt a whole batch once. So frustrating. Any advice?

Good going. My recipe says 300 so I will try 305. One improvement I could guess would be to use raw peanuts and add them at say 250 degrees. Better flavor in my opinion. You might have to order raw peanuts on line.
