I guess the beetroot is to give a red color? The traditional Gari recipe requires no color, it comes naturally when you use young fresh ginger. Around here, we usually only have ripened ginger with a thicker brown skin. If you want your Gari to be pink, you have to color it. Also, the shavings never come out as tender as with young ginger, but if you can slice it thin, it's still really good. Instead of beetroot, I just made some with the vinegar from a jar of pickled red onions. If you like Sushi Ginger, you owe it to yourself to try a jar of pickled red onions, they are not made with sweet vinegar, but they could be. I don't care about the look and taste, so I use regular ginger from Chinese store and vinager from the drug store. After washing peeling and slicing, the ginger is put into a small glass container till it's about 80% full. Then pour in vinegar so all the ginger is in the vinegar. That's it. I use the slices in my sandwich. It keeps for months in the fridge. I also reuse the vinegar, sometimes need to add a bit for the next batch.

Hi...both can be stored together in a jar, but I separated in different jars...and yes sliced beetroot can be eaten as well...
