What food do you eat with Japanese red ginger pickles?

I make a loose rice dish with prepared veggies ( Gomuko no Moto )that my mom called it Osusi ( not sure how to spell it) and veggie sushi rolls :)

I love the fact that you used natural foods for colouring the ginger. How do I get my ginger really soft? I ate some in a restaurant and I’m trying to replicate it. The sushi ginger I have bought is rather firm.

Yes, you can make without sugar. There are many recipes not using sugar. Taste will be more sharp.

@@TaLeng2023 Hi, Thank you for your comment. In Japan we make Sushi ginger using New Ginger. New ginger has thin skin and more white-ish, also part of ginger (near stalk) is pink. So traditional pink Sushi ginger is pale pink. But Red ginger is you need to dye. In Japan we use Ume vinegar (made from red Shiso leaves) this is a byproduct of making Umeboshi, It's salted plum. I can't get Ume vinegar easily here in London. So made using vegetable which contains anthocyanin (red colour)

@@yasdnilknarf1885 yes, using beetroot is most easy to dye. I am also showing at the end of video. I wanted show that we can dye the ginger using vegetable which contains anthocyanin. 😄
