This is the perfect pizza dough recipe for your homemade pizza. It is very easy to make with a few simple ingredients. This dough recipe is great for grilled pizza, baked pizza, or pizza on a pizza stone.
My favorite Active Dry Yeast is SAF Red Yeast:
amzn.to/1Kr4vuW
My favorite Bread Flour is this "00" flour:
amzn.to/1eiQEdL
If you need a good Pizza Stone, this one is fantastic:
amzn.to/1INt6G8
Canon G30 used to shoot this video:
amzn.to/1Hzvci0
Pizza Dough Ingredients:
1 1/2 Cup Warm Water (divided)
2 1/4 tsp Active Dry Yeast (1 packet of yeast)
2 1/4 tsp Sugar
4 Cups Bread Flour
1 tsp Salt
1 tsp Garlic Powder (optional)
1/4 Cup Olive Oil
Instructions:
To a small bowl, add 1/2 Cup warm water, yeast, and sugar. Stir yeast mixture until well blended and sugar is dissolved. Let yeast bloom for at least 5 minutes.
While yeast is blooming, add 4 Cups Bread Flour, Salt, and Garlic Powder to a large mixing bowl. Stir together dry ingredients until blended.
Add yeast mixture to flour mixture.
Add Olive Oil
Add 1 Cup Warm Water
Mix everything on slow speed until dough ball is formed (usually 1-2 minutes)
Turn mixer up to a higher speed and mix dough for additional 5-8 minutes or until a smooth dough ball is formed.
Take dough out of mixing bowl, spray mixing bowl with non-stick olive oil or use real olive oil.
Form dough into a tight ball and place into mixing bowl. Coat outside of dough ball with olive oil to prevent a skin from forming on the ball.
Cover mixing bowl with a kitchen towel or plastic wrap and let the dough rise until double in size. (usually 1 hour)
After dough has doubled in size, punch the dough down, cover it once again and let it rise a 2nd time.
After the 2nd rising, your pizza dough is ready to be used to make pizza crust. Enjoy!!!

Ah, nice!!! So glad y'all enjoyed it! If you put a touch more salt into the dough, it will add a little more flavor. And for the best flavor, let the dough rise in your fridge overnight before using it. Take it out of the fridge, punch it down, and let it rise at room temp before using it. Thanks again!!!

I'm sure you'll love the dough as much as we do. I do find that the dough sometimes needs a little less or more water depending on the humidity. Also, in cold temps, I warm my oven at the lowest setting for a few mins and put the mixer bowl in the oven covered with a hand towel to help the dough rise faster. Enjoy that pizza!!!!

Great recipe. Used this as my first ever dough and it turned out great (massive deep pan pizza but flavoursome dough!). Have it rising again and will split it in a few balls later to make some thinner crust. My girlfriend bought some pizza bases in the store yesterday but they'll probably go straight to the bin. It's so little effort since I can make the dough during my lunch break while working from home and pizza becomes an actual dinner this way, instead of a quick meal because "you have to eat". Once I get my own place with a yard I'll try out your other stuff! EDIT: My gf was a little cheeky and put the store bought bases in the freezer. But the dough was great again. Made two thinner ones using this recipe and will reduce it to four bases next time so our housemate can join in as well!

Troy, I love the tip about refrigerating the dough overnight to develop that wonderful yeast flavor! I wonder if that may be the secret at a local pizzeria that we love (once featured on Diners, Drive-Ins and Dives). Their dough has an indescribably wonderful taste. Your thin crust pizza deserves a thumbs up, for sure! It's just the way I like it. It's a beauty! Thanks for sharing your advice for a great pizza dough!

Hi T-Roy. I made your recipe for my Italian wife and she hated it, complaining that it was just a focaccia with cheese. I did some research and found that the traditional Napolitan pizza uses a baker's percentage of 1.2% olive oil relative to four weight whereas yours is about a perfect 10% (My scale shows 4 cups of flour weighs 550 g and 1/4 cup of olive oil weighs 55 g). I thought my pizza came out ok but a born and raised Eye-tailyun begs to differ. I am going to try your recipe again but with much, much less olive oil and see if it comes out ok.

T-Roy, I recently upgraded my 40+ year old Hobart Kitchenaid and replaced it with a Globe SP8. It is a larger (65 pounds) and far more heavy duty machine than the Kitchenaid but is still at a size that can be used in a home kitchen. The next size up is the SP10 but the weight jumps to 245 pounds and is too large for home use. Globe also makes a mixer (SP5) that is a size down from the SP8 but it is roughly the same capacity as the Kitchenaid. As you seem to cook on a professional skill level it might be well worth your while to take a serious look. david

I've been making pizza for decades. I suggest: Use cold water from the tap and heat it to max 110 degs (don't use hot tap water coming from your water heater, yuck), then add sugar, yeast. Use a ratio of two-thirds "00" Italian flour ("00" is milled extra fine), one-third semolina (pasta) flour. Less on the olive oil. Use a food processor to mix. Lot faster, really good results. Taste and texture are on another level.

Finally got around to trying this recipe, and it's the best I've tried since getting my Kamado Joe a month ago. This dough was relatively easy to work with. It didn't stick to everything like others I have tried. Only drawback was that I could not seem to get it as thin as I would like it due to the dough's elasticity. If I could find a way to get it thin, it would be awesome.
@TROYCOOKS
@TROYCOOKS 9 жыл бұрын
cfunk10 Hey Cfunk, glad you like the recipe. I like that it isn't a sticky dough too. As I mentioned in the video, if the dough springs back on you when working it, just let it relax 5 minutes, then try making it thinner. You may need to let it rest several times in between working it in order to get a super thin crust. That should do the trick for you!!!

Thanks for the video. I have just started making pizza and wished I did that years ago. I have some more suggestion for your viewer to add to your video. I found that omitting salt altogether from the dough is better so it does not kill the yeast. I just put it on the dough before cooking. I use sea salt which tastes much better. I am glad you showed how much flour and water to use for two pizza. All the videos I have seen show measurements to feed 100 people. I would be nice if you could show how to toss and stretch the dough as I am still have slight problem with stretching the dough and goes paper think in the middle. On my first attempt the dough was soft and it stuck to the peal and ruined it. I discovered a way to rescue it. Just put the place on top even it it has toppings on and turn it up-side-down and quickly flour the back then flip it back on the peal. I realised I need to add a lot more flour while working it as the dough absorbs the flour and it sticks. I use semolina on the peal and use a wooden peel to put it in the over and a metal one to get it out. I also got a travertine tile for $3 and use it as a baking stone. It is very important in pizza making as the bottom become crispy when stone baked.

Great video Sir. The thing about real virgin olive oil is to actually look at the container, in most cases especially at Wal-Mart, Hannafords and Bi-Lo among many others sell a blended oil. Watching a show on food network they claimed that 96% of virgin olive oil sold in metal containers is a blend and its usually with vegetable oil.

I made pizza from scratch a couple of days ago for the first time and it was such a disappointment -- heavy dough, so-so sauce -- that I just had to try again. I followed your recipe and directions for the dough exactly (except I used 1/2 teaspoon garlic powder and all-purpose flour) and it turned out as good as the first pizza was bad: light, crispy, fluffy, tasty, and looked terrific too. This time I made pizza sauce using a jar of Catteli Tomato and Basil spaghetti sauce and a can of tomato paste and it turned out very well indeed and made easily enough for four 12-inch pizzas (I just made one 12-inch pizza today with half the dough from this recipe). Perfect crust and adding garlic powder is a nice touch; deepens the flavor without being over-powering. The double rise likely improved it as well. Delicious!

Mr. T-Roy, I have made this recipe countless times and have loved it...Thank you for sharing it! I'm now trying something new, so my question for you concerns using freshly milled flour. Have you ever used it in this recipe? If so, since yeast is involved I was thinking to stick to hard white and possibly mix with kamut, and maybe a tsp of gluten? I'm very new to milling grain but since you emphasized freshness I thought you could share a tip or two. I plan not to sift out the bran and germ, so the challenge is to get a good texture.
