We were stuck inside due to bad weather so we decided to make our own potato gnocchi with three different condiments. ALL VERY EASY TO DO!!
POTATO GNOCCHI FOR 4:
1 kilo potatoes
1 egg
300g flour
boil the potatoes without peeling them.
mash them when cooked.
add flour and 1 beaten egg, also salt and pepper to taste.
knead ingredients together with your hands until a big ball is formed.
take pieces and roll into sausages, then cut them into gnocchi sized pieces.
There you have your gnocchi !
Tomato sauce:
squash a garlic clove and heat in a pan with olive oil.
add a tin of canned tomatoes and leave to simmer for 10-15 mins, add salt to taste.
add gnocchi to sauce and then mozzarella cut in cubes.
Cheese sauce:
same as any bechamel sauce, but use goats cheese and parmesan.
Pesto sauce:
buy it! (put a tiny bit of pasta water to make creamy)

Ahhh another awesome vlog! Yum 😋, please can Carlo teach us (for us non Italian speaking people) an Italian word every vlog? in that way i can learn new Italian words and how to pronounce the word and how to use the word in a sentence🙏🏼 i think he would be brilliant 😃

Embarrassed to say in California I just buy a bag of frozen gnocchi from Trader Joe’s with Gorgonzola sauce already added. It’s ready in 5 minutes 😜 Wonderful family project on a rainy day, looks like everyone had fun and got their favorite flavors 🇮🇹 . I hope you got lots of help with the dishes 😉

I’ve gotten the Traders gnocchi as well. It doesn’t compare to what I had in Italy, Traders is chewy and rubbery. It should be like soft pillows. I’m going to try to make it at home.

Hi guys, there’s a fresh bread gone hard trick! I The next day when it’s as hard as a rock, wet it all over under the tap for a few seconds then pop it into a medium oven until it dries out & goes fresh again!!!!! No more wasted bread!! 👍👍👍😊

I know everyone teases you Carlo on your English but I have nothing but praise for you for keeping at it. It’s not an easy language and has so many “rules” that don’t make sense. I was not blessed with the gift of language and struggled all through school to pass my foreign language classes. I later found out I actually had a processing learning disability that made it nearly impossible for me to learn a new language and retain it. I never struggled with learning anything in my native language but throw in a new one and it was the greatest struggle. I commend you for continuing to learn and improve no matter how long it takes.

There's certainly a cold nip in the air, not bad if you can keep out of the wind. In Lacombe, Alberta it's -28C but with the wind it's -41C. That's actually warmer than last Sunday. When we got up it was -41 before the wind chill! 🥶

Hi Chris, I'm Carlo, Thank you very much for the comment, your compliments are much appreciated and you are absolutely right, I don't like perfection, but things done at their best, I know that in some things you have to be perfect, let's think for example of a surgeon who has to do a complicated operation, in this case I don't think it would be enough to be at your best, you have to, and everything to be perfect. So thank goodness I do another job !!

Just watching your beautiful family making the gnocchi was such a treat, like you we have lockdowns too and it’s so depressing, when I watch your posts it’s like a breath of fresh air I can’t say enough about them. @@degunver7672 According to an online search, ... tips for keeping basil fresh, shows that if you place basil in a glass with ice water - stems only touch water, loosely cover entire basil with plastic bag that creates a greenhouse like element as basil thrives.

Nicki Darlin, this was BEAUTIFUL!! Please thank Tomasso for explaining details to us💖. My first attempt at gnocchi was far too heavy. I will now try again. Maybe with that delicious- looking Sorrentino sauce. Just a suggestion: we would love hearing more stories from locals, like Carlo’s parents, if any would be willing to share. Fishermen, maybe? Lunch today with all of you! Gnocchi making was a Sunday affair after mass. Assembly line style. Mom used to rice the potatoes, make the dough, brother and I rolled the “snakes”, cut and formed the pasta. Miss those family Sundays when relatives showed up!

Hi Nicki, I was lucky enough to discover you two months ago on a road trip. Since then I’ve watched hours a day as I cook around the clock during the winter for my family who is home during covid. I’m an Aussie expat living in Kentucky. The blue sea and the pink flowers, your vegetable garden, Holly, your gorgeous daughter and Carlos. What a smile he has. He has such a gentle joyful way about him. I look forward to your videos each day. You mentioned last summer at a winery with your friends that you hadn’t had wine in 900:days. You might have talked about it in a video, I’m making my way through them all. But If it’s not too personal, would you talk about your decision to not drink anymore? I watch how you are cooking in the evenings, relaxing with your family, meeting friends out for drinks. You seem very relaxed and happy not drinking. I’m not a bad drinker, but I do drink in the evenings when I cook and relax. I find it so difficult to separate wine, cooking and evenings. But I’d like to stop and feel better. If these things were difficult for you, not sure that they were at all, do you have any words of wisdom as to how you got back to cooking and relaxing in the evenings, going out with friends, without it. Watching this made me feel so warm and cosy over here in drizzly, cold London. Thank you for sharing these special family moments with us, Nicki. My boyfriend and I are planning a trip to Positano as soon as travel restrictions are lifted, if I see you around I'll make sure I say hello everywhere!

Nicki , Please don't apologise . That was a slice of your precious family life and I loved it ! There were two problems though , firstly, watching you all cook and eat made me super hungry afterwards so I had to 'force ' my daughter to make her sweet potato gnocchi ( a delicious alternative) and secondly , not enough of Hollydog ! I like watching you guys. It nice here Italian. I don’t understand stand anymore. My GrandMother and my Dad and his sister and Brother-in-law use to talk to my Grandmother she couldn’t speak English. So it was cool to listen them all talk. That’s how I knew a few words.

I have long hair too & Always pull my hair back when I’m mixing something or baking so I don’t get hair in the food. I laugh that you said Carlos is always talking 😂. I too have a very chatty husband. Most men are known for being less talkative but it’s nice to have one that talks more. Carlos seams like a very happy man too & that’s nice to see his smiling happy demeanor. I see you are trying to get him to speak more English on the videos but it’s also nice to hear the true Italian words being spoke in the Italian accent. Thank you for including recipes in your videos as it’s nice to try something different & Italian food is so good, yumm

Watching your family doing together makes me giggly don’t know why. Skye hated garlic? I love to see ( guess to all your subscribers) more home cooked Italian meals in the future. Tomaso is such a good cook. Can he teach how to make tiramisu or other Italian dessert? Holly is such a fearless dog. My knees were shaking whenever she walks along the railings. Nicki you are such a wonderful video creator. I’m so glad to stumble down into your channel. Thanks to you tube randomized recommendation. It pays worthy sometimes. You guys rocks!

I have always loved gnocchi. I love to mix ricotta cheese and red sauce and sprinkle Italian cheese on top. You are all a very warm family. I am Italian, born in NY and grew up in Miami, Florida. My dad was a very good cook and we always had a Italian dinner on Sundays. He made the best sauce and while it was cooking we would take a piece of Italian bread and dip it in the sauce.
