Salami is a delicate cheese made from cow's milk. It has fine eyes throughout the cross section and a buttery-milky taste. With time, it becomes slightly spicy as it matures.
For production I used:
-8l of milk from the store (3.2)
-1ml of calcium chloride
-mesophilic cultures according to manufacturer dosage:
Lactococcus lactis subsp. lactis
Lactococcus lactis subsp. cremoris
Lactococcus lactis subsp. lactis biovar diacetilactis
Leuconostoc mesenteroides subsp. cremoris
