so I didnt have any beef bouillon cubes, but I did have beef stock... it worked just the same! ...about 2 cups so did not need to add water.

Great seeing someone else leave the skins on the spuds! I always do with anything with potatoes , even potato salad, hash browns, etc. The skins taste really great. Anybody complains, I just state I have never seen a baked potato skinned! So why skin it for anything else? This works well if you mix beef and hot seasoned pork sausage together as well. I will always use onions for the gravy and add mushrooms if available. Your seasoning choices really bring it together with very little preparation.

Make a shallow well in the mashed potatoes using the bottom of the ladle then pour the gravy into the well. Just something I have picked up watching other KZbin cooking channels.

Looks delicious. When you are cutting up fresh mushrooms to saute them use an egg slicer. All of the slices are the same and cook evenly and take about a 6th of the time to get them ready. I was a single dad with two kids who loved sauteed mushrooms. Never sliced an egg but made lots of mushrooms.
