I only Deep fry x1. I have tried 2 deep fry and this was an absolute over kill. I x deep fry was crispy and you could actually taste the beef. Another alternative is to add Garlic, onion granules and ginger granules to the cornflour along with powdered red chilli. Regardless, this recipe is beyond delicious. This man is an amazing cook. I made a bloomer! But have now learned to put the floured meat into the hot oil immediately instead of leaving it in the bowl as I did as it all soaked in. Lesson learned. I also have a mental block when it comes to using beef even though it was tender. BUT the sauce was SOOOOO good and I will use pork or chicken as a replacement next time. TY for another wonderful recipe x

I will try this recipe but using spring onions instead of onion, and Hoisin sauce for the "Brown sauce". I am looking forward to buy ingredients as this "Special kind of hunger" can only be satisfied with food like this. And the fact that this dish isn't the healthiest is as you say quite obvious, but at the same time this is nothing you cook every day so i don't think that people should worry if they want to eat these kind of dishes once in a while but rather just enjoy it as much as possible when the time comes. That’s great Daniel! The brown sauce is A1 steak sauce if you’re in the States. Hoisin sauce is a great option, if you’re just using that I would add a little malt vinegar to give the sauce a little sharpness. One of my favourite things about this dish is the contrast of the chilli, sweetness and the tang from brown/A1sauce. But please feel free to modify it to your taste. Oh my oh my! I am soooo glad I just saw this. I hv watched it twice now, written it all down ... and because you were so clear with your recipe and instructions I think I am going to attempt this fab dish on Friday 12th Feb ! I think I can do it. Mmmm thank you v much Lau. Just a question. We r going to our daughter (who is in our bubble of course) so ... cld I make it at home up to the first fry.? Make together sauce ready ... and transport the whole lot, deep fat fryer as well, and do second fry there. ? She is making a couple of dishes ...(hopefully and not visiting Sainsbury’s ...) I will take my rice cooker ....and a feast will be held!! Thank you very much. Maggie. Hi Maggie! I’m so happy you like my instructions. I try to make it as simple as possible and video my recipes in real time as much as I can so you can tell how long every stage takes. Your plan sounds like it will work - just make sure the oil is nice and hot on the second fry so that the beef comes out extra crispy. And be careful that if you’re moving the oil make sure it isn’t still hot when you take it to your daughter’s. Please let me know how it goes and have a lovely meal! Michael Lau ❤️

When I open up a pack of the black beans I store them in a jar. They last for weeks and weeks if you keep them in a cool dark place. I’ve never tried freezing them but I don’t see why that wouldn’t work 😊

What do you do with the cooking oil? Difficult to get rid of?

I let it cool and then pour it into a jug, being careful not to let the debris from the crispy beef get into the jug. You could also use coffee filter paper to clean the oil. The reclaimed oil will keep for a few days and I use it for stir frying. This saves on waste and is especially useful as oil prices have gone up recently. Hope that helps 😊

Some cheats to make this quicker. Put the beef into the corn flour a few at a time so you don't spend ages separating it. Then put it into a frying basket ready to lower into oil in one go. Makes it quick to get in and out. I have one of large basket scoops which are very handy. I also use some thinly sliced peppers and carrots in my sauce.

Hi Jade, if you don’t like brown sauce you can leave it out. Maybe add another teaspoon of vinegar to replace the sharpness. Hope that helps 😊

How do you manage the oil after deep frying? How do you get rid of it? This is one reason Im reluctant to try deep frying as I have no idea what to do with it lol

Hi @Cyapow - that’s a great question! Firstly, even though we’re deep frying, try not to use more oil than you need. It’s easy to waste a lot that way. Secondly, what I do is allow the oil to cook and strain it into a large bowl using a sieve to get rid of any cooking debris. Then I store it in the fridge and use it during the week to stir fry or for any cooking that needs oil. The oil should last a week like that and best of all it’s not wasted. Especially because it’s very expensive these days. Hope that helps 😊

Hi Monica, I assume you’re in the US? If you are you should use A1 Steak sauce. I’ve been told that’s the closest thing. Hope that helps 😊

Hi Christine - I’m assuming you’re in the US? If so (I’m in England), the closest thing is America’s A1 original steak sauce. Hope that helps 😊

Hi - I haven’t used rice flour before for this recipe. I know it works well with corn flour/cornstarch and potato starch. I think it’s worth giving it a go with the rice flour though. Maybe try a small batch and see how it goes? If you try please let me know if it goes well. I’d love to know. Thanks 😊

Apologies, when making this vid I never thought anyone outside the UK would ever watch it. In the US the equivalent is A1 steak sauce. I don't know if you can get HP sauce but that's the biggest one here in the UK :)

Michael could you tell us if you can reuse your oil as it is quite a lot to throw away,our supermarket is now restrickting us to 2 ltrs or 2 btls of oil can you filter it thank you

Hi Selby - I do reuse as much oil as I can. I use it to make stir frys with. It keeps reasonably. When making this recipe it makes the oil quite cloudy, but if you cover the pan and leave it over night the sediment settles at the bottom and you can pour out the cleaner oil. If it’s still a little cloudy you can always use paper coffee filters to strain it through. You can use a funnel to put it back in the original bottle. Hope that helps 😊

I make this, and there's no need to fry twice - leave first batch in until desired colour is achieved, then DONOT put in a bowl! That just lets it steam and get soggy! AND the best tool for transferring any fried food from fryer is a spider, not a slotted spoon ,as that retains too much oil. If you don't have spider, use tongs. Put beef on to a wire rack, do next batch when oil is up to temp. Proceed with sauce etc...easy, peasy, even place beef on rack in 200 (Fahrenheit oven) whilst you prepare rest of dish, which will still retain crisp, while getting rid of greasiness. Also, It's nice if beef is medium rare on inside, not too dry that way!

First, thanks for watching - always much appreciated :) I'm sorry to confuse you - this was my very first video I uploaded and I never dreamed it would reach anyone outside of the UK so it never crossed my mind that I would have to explain some UK ingredients. I believe in the US the most common equivalent is a1 steak sauce but you're quite correct with HP. Tubbies I've never heard of as I don't think it's in the UK. My first ever video. Cut me some slack dude! I re-made this video to make it shorter for people like you. It’s more concise but this video here still gets way more views, probably because as I talk I explain every thing in detail which is what a lot of people want too. I understand if that’s not what you are looking for. However the length of every video is clearly displayed on every video on KZbin and the beauty of this is that you can pick the videos with the right viewing time for you. At the same time I am sincerely grateful for your feedback as everyone’s opinion, as long as it is genuine, is valued by me and I do listen. My job is to make what I think are the best videos for my audience but I know I can’t make everyone happy. Peace 😊
