I found a YT recipe similar to yours about 2 months ago and have cooked it about 9 times now. In mine, you blanche the capsicum & pineapple (I also add carrot & onion) first and you mix the sauce in a bowl before adding both the vegies & chicken or pork in together. Yours seems a bit easier as it utilises the frypan instead of the blanching pan so I will try your method tonight. The fact yours is close to the one I love tells me you really know how to cook good food. Thanks for sharing.

Hi Louis, I’m glad you like the video and thanks for your question. If this is the only dish you’re cooking I would use 3-4 times the amounts I’m using. If you’re making a banquet/ more dishes, 2-3 times the amount. Either way, make it in batches rather than try to cook it all at once because cooking it all in one go makes it quite a bit more difficult. Hope that helps - please come back to me when you’ve done it, I’d love to hear how it worked for you. And let me know if you have any more questions 😊

@ChowWithLau
@ChowWithLau 3 жыл бұрын
Hi Javier - thank you for your kind comments 😊 You could certainly add sweet chilli sauce to this - I would add it at the end and stir it in. My preferred way of spicing this dish up would be to add some chopped fresh chillies to the dish when frying off the onions and peppers. This would give this dish a real zing! Would grating the ginger be the same as chopping finely
@ChowWithLau
@ChowWithLau Жыл бұрын
Thanks for your question. I would say, not quite, because grating releases all the juices. This isn’t a bad thing but if you’re going to do this, use less ginger (about half) or else it might start to overpower the other flavours because grated ginger is very concentrated. Hope that makes sense and helps 😊

Correct me if I'm wrong, but I think the "types" of oils one uses, also, the "brands" of soy sauce etc is the most important part of these dishes. That looks yummy 😋
@ChowWithLau
@ChowWithLau 4 жыл бұрын
Thank you for your comment 😊 When it comes to cooking with oils I would say that anything with a high smoking point and that doesn’t have a strong flavour is good for stir frying and deep frying. Oils used for flavouring like sesame oil are a separate subject. As far as brands of soy sauce are concerned, that’s a personal choice and depends on what you can get. For example some supermarket brands sell dark soy sauce that is so thin it might as well be light soy sauce. There’s a lot of subtle differences so it might be useful to try as many as you can. Overall though, my channel is aimed at everybody, including beginners, and I don’t want to scare newbies off by getting too technical with the ingredients. I try as much as I can to design recipes that most people might have the ingredients for in their cupboards. Glad you like the look of my dish and thanks for the watching 😊

Hi Mr Stone! Thank you for your comment, I’m happy you like this recipe. Please go ahead and take this recipe too - the more people who try it, the better 😊 I don’t think I use wine in sweet and sour recipes, it’s been a while since I made this video but I’m pretty sure I didn’t. But hey, you’re welcome to use it if you want. I’d add it just as you’re finishing the sauce and let it bubble away for a few seconds. Hope that helps and thank you for reaching out 😊❤️

@@ChowWithLau I think it's had a bit of bad reputation over the years, bought some from my local Chinese store in Cardiff uk for fried rice, the taste is quite incredible, a cook quite a lot of Indian food from scratch, now looking into some of the Chinese cookery, I'll subscribed to your channel,, very good sir,,,,

@@1971dave You’re right, there’s all sorts of myths about msg. And there’s no doubt that it makes a difference. I just don’t like to create controversy - and it’s not always easy to get for some people. But if anyone asks I’ll always tell them to try it if they want to. From what I’ve read it’s perfectly safe. I’m happy you like my channel - thanks for subscribing and your feedback. Very welcome indeed 😊

Sweet and sour is pretty much the only time I like pineapple. Doesn't seem the same without it. Bring pineapple within 100 miles of my homemade pizza on the other hand and there will be a fatwah out on you! 😉😁

Lol! Pineapple is such a controversial food. Maybe we should just stick to pineapple and cheese cube 'hedgehogs'😅

Lau I see you could have easily peeled the ginger iwith teaspoon c nstead of wasting so much by chopping off the edges
@ChowWithLau
@ChowWithLau Жыл бұрын
Thanks for your comment! I see what you mean, my peeling was a bit clumsy back then. Also I was wanting to remove the bad bits of ginger. My mum actually then told me not to peel the ginger at all so I don’t do it anymore 😅 Thanks for watching - much appreciated 😊

Whenever I read half an onion or whatever I always throw the whole thing in as otherwise it'll end up in the bin looooong before I'll ever find a use for it. I hate wasting good, and who can afford to do so?! 😊
@ChowWithLau
@ChowWithLau 2 жыл бұрын
I totally get that. Onions never last long in my house as I use them in nearly everything I cook. Might be an idea to buy the smaller onions? One of those is probably the equivalent to half a large one 😊

@@ChowWithLau i do hope you didn't think I was criticising you or your recipe? Your suggestion is one I have considered but have found it comes with its own difficulties! I have come across recipes that ask for 1/2 of green, orange an red peppers, which I understand is great for the colour of a meal and couldn't care less about food waste but for those of us that are less than middle class and are poor its ridiculous and impracticle. Anyway, my comment was just 'conversation' and I hope you understand was in no way negatively intended towards you?

@@williamfowles2940 Hi William, honestly I don’t take your comments as negative. My suggestions for recipes are always what works for me in terms of quantities and flavour but I always encourage people to ‘riff’ off of then and modify my ideas so that it suits their tastes and preferences. Your comments have been respectful and honest and I welcome them. I am always happy to discuss and take on ideas and honest criticism. I always think that recipes are guides and there to be modified. The beauty of cooking is that as long as you like what you’ve made then you’ve done it ‘right’ 😊

That was my own fault. The knife was perfectly good but I used one of those awful v sharpeners and it ruined the cutting edge. I’ve since bought some good whetstones and another couple of sets of quality knives so this shouldn’t happen again. Lesson learnt
