Hi Henry, thank you for sharing your recipes. I love Persian food and this recipe tastes better than the my local Persian restaurant here in Atlanta. I couldn't get the minced meat to stay on the skewer, so I shaped the koobideh in the same shape and just placed it on my grill and cooked it as you instructed, flipping the meat over every 20 seconds. I also used your Persian Basmati rice recipe and they both turned our great! Thank you!

Henry my guy, I just made this tonight…awesome cook! I mixed 2lbs of ground chicken breast with 2lbs of regular ground chicken over a Webber grill and nothing fell off. Temped it and now can’t wait to taste it! Thanks for the video and recipe!

Hi Henry, I have noticed that in some koobideh kababs you are using grated onions and the juices separated. While in this chicken koobideh chopped brown onion is used without separating the juices? Any reason for this? I love making kababs and would like to know the difference.

hi Henry. really enjoying your videos. I tried the koobideh on the weekend using stainless wide skewers like yours. Some meat fell off, into the coals. What's the trick to stop the meat falling off? Turning it every 10-20 seconds like you say in the video? But when do you stop turning it every 20 seconds... ?

Hi Phillip, Its important to ensure you push the meat hard onto the skewers so its not loose. As for turning the skewer, You only want to do it for the first 30-40 seconds so it seals the meat onto the skewer

Phillip Phan if you find it's falling off quick, lower the time and turn it every 10-15 seconds for the first minute to ensure the meat seals to the skewer. Also ensure your grill temperature is high

+Samina Qadar - I made my own skewers by using the butter knives from my stainless steel flatware. An ideal length for the George Foreman grill.

+Samina Qadar - Just google "stainless steel butter knives" and it will pull up an image for you. I formed the meat over the flat blade and down the the handle a bit, the same as Henry shows using the flat skewers. The koobideh is not quit as long as Henrys, but it's the perfect length for the Foreman grill. Place the koobideh downward on the grill with the handle slightly sticking out after you close the lid of the Foreman grill. You could use the same type of skewers Henry uses, but I did not have those kind of skewers, so I improvised using my butter knives instead and it turned out quite well.

I Revolver I you can, but bear in mind because beef is generally a dry meat, it may fall off the skewer and wont have the best flavour. better to use lamb

looks great. how do u keep the meat from falling of the stick...Do u cool the meat in the fridge before u attempt to place on the skewer? Or is the trick to keep mixing the meat?

cnakeeyes Ali its very important to use meat which has a decent amount of fat, the fat is what holds the meat together. i recommend chilling in fridge for at least an hour before skewering it. If it still continues to fall off, you can crack 1 egg into it, this will bind the meat together :)

If you add a teaspoon of baking soda per kilo of meat it will get much browner and taste more like the grill without drying out.

LOL,, its not easy. It takes practice. I'm an old man and if I can do it, You can to. Make sure your hand is wet with warm water when you form the meat and after pressing it on the skewer but don't get the skewer wet. If the skewer is wet the meat won't stick to it.

you said in your video that you are using 3 kilograms but in your recipe description below it says 2 kilograms. just trying to be helpful. and by the way, my wife and I have made your version of this and we love it. As for the comment that Persian koobideh is such and such way, I challenge you to find a Persian food recipe bible or find one Persian recipe to any food that two are alike. it all depends on your personal taste.
