Freezer meals have been on top of my mind in preparation for this baby! But with an always-packed freezer, I have to be conscious of how much space things take.
Here's how I make Thai curries for the freezer that will reheat well AND will not take up unnecessary space. This video isn't so much as recipe, but more of a tips and tricks video. You can apply this method to any of my coconut-based Thai curry recipes. And now you will have a meal that's ready to be served in just a few minutes!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I always find it difficult when I do the green curry, as quantity wise it is too much for one person so I invite my mates to come around. But then, they finish off the whole thing like there is no tomorrow, so faced with another problem where there isn't any left for my second round. But thanks to this great tip, I can now have my green curry in peace and enjoy it later on by freezing it.

Hi Pailin, Great idea to freeze curry to make quick meals when you don’t have time to make it during the work week. A great spacing trick that I use is to cut cardboard to the same size as the storage bag that you are using and place the bags in between the cardboard then freeze them. The bags will be flat on both sides and will make stacking easy thus saving more space when storing.

Thank you,Thank you,Thank you! Finally, a comfirmation that vegetables Do Not freeze well. Whether it's carrots, cauliflower or corn. Just take a thawed vegy with its fresh counterpart and you can't miss the difference in taste & texture. Also loved the "hot water" defrost tip.Always on point, as usual. Hi Pai, my tip: I use coconut oil to cook the curry paste and skip reducing the coconut milk. The curry comes out just delicious. Love your tips!

Tamarind sauce? Plus, put your bag into a appropriately wide-mouth vessel and fold the bag rim over it. That way you have a "bag bowl" to easily pour into. When filled, grab the bag from over the bowl lip and close it. MUCH easier than juggling the bag alone.

i just watched your live stream that you had with Marion, i cant believe i am just watching it now, that crab fried rice she made looked really good and so did the dish you cooked, i loved those dishes because i cant really do spicy food as sriracha is my limit when it comes to the spice scale

Looked absolutely delish! I believe better results are had wrapping bell pepper firmly in Aluminium foil for freezing. One other thing is herbs that have been brushed with olive oil tend to be ok with freezing as it's the freezer burn that is the main issue. That being said, we all would ideally want to be going for the fresh herbs and vege option, so this is more directed to those who may not have easy access to certain fresh produce

I often freeze Paneang Curry (which no vegetable add only kaffir lime leave😁) then put it in microwave when need serve with toast or dinner roll. 😋😚

8:15 -- I include a _date_ on the label, so I don't lose track of how many -years,- er months, something's been in the freezer.

I love make-ahead freezer meals! I made some for the crockpot before my mother came down to spend Thanksgiving with us. It was an extreme timesaver! For this recipe, would bok choy, baby corn spinach and mushrooms (my favorite vegetables) be good added after it's been taken out of the refrigerator?

Hi Pai, congrats for your safe delivery. Anyway, what a great idea to freeze the curry. I would use container to freeze my curry. The use of single-use plastic waste makes me feel fuzzy, especially with the concern of tons of plastic waste in the world.

Congratulations on your new arrival!! I freeze the dough for pizza (see tom yum pizza recipe), so that on days I feel like having it i can just leave the proofed dough out to defrost while I'm at work. Then all i need to do is add the toppings to create a delicious fresh, homemade pizza within minutes in the evening ☺️

Sawatdee khrap Pailin! I’m a big fan of your videos and I’ve been subscribed to your channel for a while! I just was thinking that you should try some South Indian foods! In this video you said that a major difference between Indian and Thai curries are that Indian ones are “thick and gloopy,” but actually it depends. South and North Indian cuisines are very different from each other and are regionally based. It varies depending on the ethnic group and most of Indian food served at western restaurants comes from the northwest. South Indian food, which I grew up eating (although I’m from California), is actually a lot like Thai food. In Kerala and Tamil Nadu cuisine, we use a looooot of coconut milk, grated coconut, coconut oil, fresh holy basil, curry leaves, lemon, fresh chillies, black pepper, and other fresh ingredients. We have a lot of steamed cakes (both savoury and sweet), eat rice with every meal, use banana leaves, and also use pandan (or kaithai) to fragrance our dishes. We eat a lot of fish. There are many dishes which are actually very similar (or identical) to Thai, Indonesian, and Khmer ones, but have different names. It’s due to our cultures’ interconnected histories! So do give it a try! I’m sure you’d love it 😁

Thank you. Your are so good for explaining, but I have a comment, I would not touch the plastic bag, would use glass food saver, it is much healthier, wouldn't you think so?

I freeze all sorts of foods... Recently, I made Chicken Tikka Masala and froze 3/4 of it, in 2 containers... Didn't think of using Freezer Bags... Thanks for the tips :-) I also made Coconut Rice and didn't realize that it could be frozen... I'll remember that for the next time :-) Oh! For my Coconut Rice... 1 Cup of Jasmine Rice (washed and drained), One small cube of Coconut Sugar (dissolved in 1/4 cup water), One can Coconut Milk (I use Aroy-D ONLY) and 3/4 cup of water, in my Rice Steamer... I sometimes find that there is too much water and the rice comes out soggy... I think 1/2 cup might do the trick but I know that 1 Cup turns the rice to mush...It's a real balancing act... lol Anyway, Great video, I got a lot from that. Thanks :-)

You can use just regular glass jars(like from Marmelade)and freeze food. But don't fill it to the top. It's actually better than plastic.

I’ve been looking everywhere on how to make yellow thai curry. I would like to make it sweet and with little to no heat. I’ve had it once with coconut milk, carrots, potatoes, opines and pineapples. It was sooo good. any help?

I’ve frozen a beef stew with mushrooms and carrot chunks in it before with “not bad” results... mushroom texture in particular was pretty well preserved. Carrots stayed whole but were a bit softer.
