Spaghetti Aglio E Olio is simply translated to spaghetti with garlic and oil. It's the simplest pasta you can make. And though it is super simple pasta, its can be very hard to perfect. But the technique used to make this is the bases for many classic Italian pasta recipes and its teaches you how to make a pasta sauce with pasta water. Spaghetti aglio e olio is great with peperoncino or red pepper flake. And there is no cheese in these dish.

Stephen, love your channel and you nailed this one. My mom was 1st generation from Calabria. We have this often. I have a variation you may want to try: for a heartier dish I add a can of undrained garbanzo beans instead of pasta water to stop the garlic from getting too brown. Then I mash about 1/2 of them and finish the pasta in the sauce. Aglio e olio is a great dish to make variations with! Keep on cookin!

I went to several local Italian restaurants in my town. They all (2) refused to do it. They said it did not exist in Italy. Which is absurd because i have been to Italy several times and they do make this there.. Ironically they both served alfredo sauce. Something that is not served in Italy..

Chance Whistler Well that‘s not true... it exists and it is very popular. But in restaurants actually it‘s hard to find, cause it‘s seen as a too simple receipe. You normally cook this dish when you come home wasted at 3 o‘clock in the morning and you and your buddies feel hungry! ;-)

@@Epimenides6 Yeah I wouldn't even concider this Dish at a Restaurant, ingredients are dirt Cheap and it's so easy and QUICK that anyone can pull it off, don't see the point of paying someone to make it for me, especially in a Restaurant. But at home.... It's the perfect "fuck I'm starving and I ain't got any ingredients" Dish. I allways have good Olive Oil, Pasta, Garlic and Spices on hand and I got a Parsley Plant. And I also got Parmesan or Peccorino - just like to finnish it with it. With prepping and anything it takes MAX 20 Minutes if you are slow, tastes bloody fantastic and I never screwed it up. Perfect dish.

Yum... My mom made this a lot, especially when I was young and came home late. She'd get up and throw this together even at 11pm ; ) She didn't use parsley, (though I do if I have some) But she'd throw in some broccoli to the pasta water and blanch it quick. I love the smell of this pasta dish!! I do like romano cheese on mine, and I do make it a little wetter with the pasta water, or as my Mom used to call it, the 'juice'.... It's good for soaking up with Italian bread. Thanks for posting this recipe. I really like your channel.

I've been cooking this dish since the early 80s. I think I have had at least one bowl every week since. It is brilliant. It is simple. But you have to do it properly. This man respects this dish. Well done.

Just found your show. Absolutely LOVE it. You are amazing. My grandparents were born in Italy (Naples and Florence). My Mom taught me to cook and used a mill. I bought one a few years, got lazy and now puree my tomatoes in the blender (don't hate me! lol). I have made your weekday sauce and it's wonderful. Thank you so much for your wonderful recipes. I plan to make so many of your recipes, especially the gnocci. My aunts lived in Lewiston, Niagra Falls and would visit us in New Jersey. They owned a bakery and restaurant. My Aunt Sabina would always make gnocci for us. I was in charge of rolling out the pasta and cutting. I was in grammar school (yes, I'm old - 71!) It was our favorite and one of my most fondest memories. Your recipe looks really delicious and plan on trying it soon. You had a show about "comfort" food when you're down. Mine is Pastina - just butter and Pecorino Romano, little salt and I am in heaven!!!! Another relative we visited every Christmas Eve - my uncles' daughters never married and lived with him. They would make "bows" or "crostoli". They were amazing - paper thin, lightly golden and melted in your mouth. I never got the recipe. Tried a few recipes from Pinterest, but just not the same. Hey, I have been putting the pasta directly from the pot into the oil, garlic, and chili flakes and adding pasta water as needed. It's been good - but today I grabbed some pasta and tried it as you instructed. Makes a big improvement! Thanks a stack!!!

I’m Italian, the execution is perfect, but the complete name of the dish is: Aglio, olio e peperoncino. Just one thing: the parsil I think it’s not in the original recipe, BUT is a very nice touch. You can try it with or without. Great channel for Italian recipes btw 👌

For an alternative version you can add toasted bread crumbs at the end like you would do with cheese, they will also absorb the oil Cheers

Hey, I'm from the UK, and I'm really impressed with your videos. You really seem to "get" whats important when making really good Italian pasta dishes, and clearly understand that even with very few ingredients and the right way to go about it, you can make some fantastic, simple Italian pasta dishes. Dishes that rely on their simplicity and the right method. Keep up the good work!

Greetings from Dublin, Ireland! Made this for the first time today (literally just finished wiping my mouth with a napkin) and I’m blown away at how delicious it is. I’m a huge cheese lover, but this recipe honestly doesn’t need any cheese at all. Think my takeaway from this is to really make sure the water is salted properly. That’s what made me not need (“need”) cheese with this. Really fantastic stuff.

That looks really nicely done. When I do it I wait until it reaches that creamy state where the pasta water and the pasta has created that magical sauce with just the right consistency. Don't rush it, and don't over do it. You can also add some good quality canned sardines or wild salmon to this dish. The liquid in the can of seafood adds a really nice touch of flavor.

I have watch so many video on how to make this dish. So many ways the taste is just wrong or too plain. I have watch one italian chef, his method is exactly the same as yours. To me, this method of cooking the pasta taste the best. By far you are one of the only one to have have given explanation on every single steps. Thank You.

When I stayed in the Sicily region for one month, we stayed in palermo for 3 or so days. It was a gritty old city, but I loved everything about it! The old buildings, the darkened streets, the midnight music, so charming. Will definitely go back.

I make this with lemon, but i'm thinking i might have to add 1 or 2 anchovies into the oil to begin with now! can't believe it never even crossed my mind and i add anchovies to so many other dishes in the same way!

I’m Italian, don’t do that. The melting garlic is a legend spread out by Goodfellas. In reality garlic doesn’t melt, it burns instead. The problem with thin garlic is that it burns real quickly and it’ll mess up all your sauce. Nice video btw 👍

And that's how it's done. I've seen so many claiming "authentic" and then using fresh chili pepper, then adding even more fresh chili pepper at the end. You use chili flakes and/or cayenne pepper if you want it done as they do in Italy. Some regions even throw in anchovies in the oil at the beginning, but that's a completely other idea. This guy is truly legit and great to watch.

I learned this dish from Vincenzo in Italy. (Chef on youtube). He cooks the pasta the last minute to aldente in the skillet. I never add parsley to this, and I have been using chopped garlic in water from the store. I love this dish. I have added chopped chicken white meat a few times. I smother it in oil.

My Mom cooked this when my siblings and I were younger, and I hated it, but now, in my 30s, I love it! My Mom calls "E Oli" for short. Also, we add more salt when we eat it at the table if there's not enough salt to taste.

Hey there! I'm from Rome, Italy. What I'm about to say has an inner flaw: everybody has his opinion around the kitchen here in Italy. So, from a Roman point of view, you used way too much garlic (you admitted that yourself) and parsley. That said, it's the BEST pasta aglio e olio cooked by a non-italian chef I've seen on youtube. 2 tips from an Italian guy 1-take of the bud inside the garlic. 2- try to add an anchovy with the garlic.

Yeah, so I just watched another youtuber make this dish, and I was like "am I going insane? I make this all the time. It can't be this hard." I came to your channel for sanity. Excellent video as always. I food processor my garlic and put cheese on it. Sorry to all the Italians I just put in a comma 😂. Oh also for folks who think this is too much garlic, the key is heat, if you cook it low it doesn't have that bite and the garlic doesn't burn, the level of "action" you see in the pan here is spot on. I use like 6 big cloves (for a pound of pasta), which I know sounds like an insane amount, but it's not overwhelming. (I also don't finish my pasta in the pan for more than about a minute, but I'm sure you'd get a superior result if you did, I just can't be bothered to screw with trying to get the pasta consistency right with that much cooking in the pan-- cause I tend to do a full pound I don't think it would finish as nicely as this). I also love throwing capers and green olives in with this, but we're definitely on to a pasta with a different name I don't know at that point.

I’ve eaten a version where the chef dressed the dish with toasted bread crumbs sprinkles. Added a nice bit of texture crunch.

italians keep telling that you need to have a big amount of water to cook pasta. I don't see the point of this. if you need starchy pasta water, like in aglio e olio, you will use a small amount of water in order to concentrate that rich cloudiness. anyway, if you transfer pasta in the pan pretty soon it will release its starch so it's fine. cool channel btw.

And also, never talk to italian people about one pot pasta technique! Every time they see one pot pasta they start yelling it's not real pasta, it's wrong and start playing mandolino and sing a drammatic song about their mamma's lasagna. kinda.

Probably the only reason is to cook spaghetti or long straight pastas in it, because if you'd use a small pot they will cook unevenly and have an overly cooked end and a hard end pasta. You'll NEVER see an Italian use a big pot to cook short pastas like paccheri or penne or something like Pasta Fresca (fresh pasta made with flour and eggs) And since foreigners are understanding that pasta is not always long only now, the probably have the misconception from past interactions with italians

Ok I was looking thro all your videos Steve for a recipe that would feed about 20 people cheap ! I say this because I work a regular job but every 3 days on my own I feed the homless and clothe them in my area. I have people being me donations and I got a huge pot that was donated special for all the soups I make and take down to them.I know they have to be so tired of warm bread and soup lol. I need a cheap pot of something that will feed alot of people and not break my bank if you have something that you think will help feed them cheaply and taste good plz let me know k...tks God Bless 🙏💜

That’s so nice of you!! This would definitely work, as would the tomato soup!! You could substitute fresh tomatoes for canned tomatoes and just skip the roasting process, that would be a very easy thing to do as well! Just add more of everything and blend!

Dude...thank you. That was astoundingly good. Didn't have parsley, substituted with cilantro, water had some salt but also another spice mix called Aromat, kinda chicken stock type of flavor....you helped me impress myself hahaha

I’d like to suggest that you don’t pay for this meal at an Italian restaurant, especially in the states. They over charge for a plate of pasta like no other. I’ve never seen an Italian restaurant price their pasta dishes anywhere close to what they are really worth unfortunately.
