About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Thank you for the tip on using less water. It's my first time trying to cook sticky rice by boiling in a pot. I probably ended up with a ration of 1 cup rice to 1 and a fifth cup of water (instead of the usual 1 to 1 and a half ratio), boiled the rice till the water is level with the rice, turned off the heat and covered the pot and let the remaining rice absorb the water. It can out lovely, with just a little browning over the spot where the flame heats the pot. The slightly hard rice from that area is delicious! This method probably works then the rice isn't much so there's more surface area to rice thus the absorption is just right.

I cooked mine in the microwave. I pretty much followed your directions but soaked the rice for 45 minutes prior to cooking, I think my microwave is 700 watts and I had it running on full power for 25 minutes, checking and turning the rice halfway through. I cooked it in a Pyrex jug with a small plate to cover the top and I was pleasantly surprised with the end result.

After watching your video on sticky rice, I discovered a great method in my rice cooker. I have a Zojirushi with a sushi rice setting (uses less water than white setting). I measured the rice, rinsed, added the water for sushi rice, adjusted the cooker to the sushi rice setting, then set the timer for the next morning. I got up to perfect sticky rice! I think the secret is the long soak during the night, coupled with the microprocessor cooking program of the Zojirushi. I enjoy your videos!

Thank you so much, it works exactly right on. I used 10 inch Corning so the rice level is just one inch when done, less likely to get sought,but I should not wait for ten min.

I tried your recipe using brown sticky rice, steamed method. The package directions said 30 minutes cook time. At the end of the steaming and resting time the water had been absorbed, but the rice was undercooked. I used 1 cup of rice to 2/3 cup water. So I added a third of a cup more of water and steamed it an extra 15 minutes. It worked. Thank you for your instructional video. I found it to be a helpful guide.

I dont understand the problem people have with the 4+ hr soak. I just let it go overnight, and alternately if I was still working i'd let it go all day while I was at work so it'd be ready in time for dinner ... then it's just drain, lightly salt, and steam for 20-25 mins ... no water ratios needed. COULDNT BE EASIER or more stupidproof.. TIP: For those of us without thai woven bamboo steamer cones, ive found that a reusable buttercloth bag (of the sort used for pressing nut or soy milk - you can buy em on amazon) placed in a chinese bamboo steamer (or any steamer) works great. Place the soaked drained rice inside the bag, spread the bag (and the rice within) flat in the steamer, and steam, then stand on end and very lightly compact into a ball and upend into a bowl.

Thanks for your comment! You're probably right, although my concern is that sometimes the short grain sticky rices are also labeled glutinous rice and I wanted to avoid any confusion (there's no short grain if they come from Thailand). I haven't tried using these methods with the short grain, so didn't want people trying this method with the wrong rice and have it not turn out :(

Hello, thanks for all your tips and tutorials, very helpful and insightful. I would like to inquire about how to cook Thai sticky rice COMBINED with Thai jasmine rice. I don't/can't eat much sticky rice in one servingk, but like to combine it with regular Thai jasmine rice, best of both grains combine. Please offer your expertise and tips. Thank you.

One more thing on the topic of Seasoning a wok. You emphasised that "You need to season your wok every after use" and I like this idea. My question is this, CAN I season all my pots and pans made of carbon steel AND cast-iron pots even if they're not woks?

I’ve been soaking the rice then putting into a steamer , One of those multi layered metal ones, that I lined with soaked bamboo leaves like you use to make Chinese rice dumplings. Not so clever as your bamboo basket, but the rice ends up with that lovely bamboo leaf fragrance. I don’t add extra water, since the rice seems to get all it meads from the steam.

You cannot cook with coconut milk. Just need to ara the pulut with coconut milk after it is done. Or 3/4 done. Depends how hard (Al Dante) u want it to be.

Sussy Leon Kuffo glu rice is more chewy and sticky after cooking, regular rice is just basic cooked rice with dry and harder texture. Glutinous flour is different from tapioca flour, in some cases you can use tapioca as an alternative but some you can't. Glutinous rice is sweeter, less sticky after cooking and is white instead of transparent. Hope this help

Hi there! The sticky rice with mango uses the same rice, but it is then marinated in sweet coconut milk.

Pailin's Kitchen so, if I use rice cooker, no soak first, use ratio 1:1.5 water to rice, after it cooked and still hot, put sweet coconut milk to the rice? I'll try it then I'll let you know the taste. I hope it would be the same like the traditional one I made from your recipe. I love mango sticky rice from your recipe. My friends here said it's so authentic thai taste 😉

Do you clean the basket with soap and water when done? I just bought a basket I'm not sure if I should use soap or just clean it well with hot water and let it air dry. Will it take on the taste of soap?

I just wash it with hot water and scrub the part that touched the rice with a brush, but don't let it sit and dry out or the rice will be stuck and become harder to wash.

Sorry, all...I meant to say 'Zoj' for Zojirushi! I have had this rice cooker for many years; probably about 10 years or so. They are more expensive, initially, but they are large, can do any amount of rice from 2 to 10 cups, and has multiple rice settings and has a carry handle, if you want to make rice and take it to someone's house. It is a GREAT cooker, and I highly recommend it! I have way more than got my money's worth, and if this one breaks, I would buy another in a heartbeat. I am from Hawaii and so eat rice almost daily, and would be completely lost without my rice pot. I have never tried 'sweet rice'/stick rice before in this pot, but have made regular short grain, med grain, long grain, basmati, jasmine, brown, and it always turns out perfect! It comes with a non stick rice pot, a paddle, and a measuring cup. Basically, you use the measuring cup to measure the rice with the marks on the side, and then use the inside marks on the pot itself which includes different lines for different types of rice to measure the water. It is an awesome pot! The different settings on this pot is as follows: 'white/mixed', 'rinse free', 'quick cooking' (prob Uncle Bens converted or minute rice...I have not used this, as I never make minute rice), 'brown', 'sweet', 'porridge', and 'sushi'. It has a timer for you to program your own setting, and also a 'keep warm' setting, which for most all settings it automatically switches to, when the rice is done. It also plays one tune when you start it, and another tune when the rice is done! I cannot recommend this highly enough! Please note, because it's lid is part of the rice cooker, it does not have a see thru lid, but I love the attached lid, as you cannot lose it at anyone's house or your own! With cooking of most all rices, it does leave a little condensation on the inside of the plate on the lid, but I just wipe it off with a wet paper towel. If you need to get up underneath the plate, it is easy to disassemble, wash, and put it back together....sometimes you will need to do this with certain rice types, esp brown rice, but very simple to do and very easy to use. It comes with an instruction booklet, and I think there are some recipes in the back, but I have had the pot for so many years and moved once, that I am not sure where it is right now...sorry. This particular pot is Zojirushi NS-WAC18, but this one is several years old....I am sure any of their newer models would be fine...just take a quick look at the box to make sure it has the rice settings you want.I will let you all know how my first attempt at 'sweet rice'/sticky rice comes out!Good luck, everyone, and thanks for the videos, Pailin! :)

can you still use this method with wanting to make the mango sticky rice? the rice wasn't done all the way and was dry after I steamed it for 30 mins and even with soaking it for 20 mins etc. 😣

I always make sticky rice 'the easy way' wich is also very fast: Very inportant to have an teflon coated pot! No soaking! Wash sticky rice, put in the pot with a dash of water and a smidgen of salt if desired. Get to a boil and then keep over a very low flame. (lid on!) Stir regularly. If the rice has turned dry, add a little more (or add coconut milk). Keep adding fluids in small portions and turn the rice every 5 minutes untill it is transparant and soft/done to taste.
