About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

Left home at 14. Im 53 now. When I was 16 I lived with my Cambodian boyfriend and his gma. We had this rice every day. Later in life I bought that pan and hat to try to make the rice. Huge fail every time but I still have the hat and pan. Been a good 30 yrs I've been packing these around with me. Never thought about looking for a video how to cook it properly. This woman took me in . I loved her so much. I hope I can make the rice like she did .

My father bought a huad in our local Asian market (in the US) many years ago. Since then, we have moved to South America. When people see his huad, they don't believe that it's used to steam rice. We've stopped trying to convince them and just enjoy the steamed rice :)

Interesting! I've never knew this is how you cook sticky rice in Thailand! In China we use sticky rice in lots of desserts and sometimes we cook it with congee! Great video, thanks for sharing ♥

Thank you for this. My friend's mother-in-law was from Thailand and she used to bring this rice over sometimes. It was so good. Being from Louisiana, I love my rice. I always wondered how it was made. I asked my friend, but he was non functional in the kitchen, lol, so thanks for this.

Awesome video! Thanks! My boyfriends dad was born and raised in Thailand so he gave me a huad, and I was about to make some sticky rice but I kinda forgot some of the steps. I didn't wanna call Sune and bother him (plus his accent is very heavy so talking on the phone is usually kind of difficult..) but this video answered all of my questions! :))

Sticky rice actually absorbs much less water, and you can tell my how much the cooked rice grows in volume compared to when it's raw. Regular rice will puff up about 3 times in volume, while sticky rice only less than double it.

Plenty of people from Laos also use this method. I just wanted to check the soaking time. I think you can reduce it some, by using warm water while soaking...

In Thailand they always line them with a plastic food-grade bag so they don't get the rice stuck in it. But you can try soaking it in water so any dried up rice falls of easily.

I think you may have been given a Japanese sticky rice recipe (for sushi), as we don't use rice wine vinegar in Thai cooking at all! But I'm glad you found this helpful :)

Your videos are very much appreciated. Thanks for the detailed instructions. I do have one questions: why would this rice be twice the calories as standard rice? Given that it has absorbed so much water, I would think it would be less calories by mass because of the extra water content. Just curious.

great, learnt something new as I have been trying to boil sticky and it would not come out good. is thai sticky rice the same as Korean sweet rice ? when you soak Korean sweet rice for 4 hours, it breaks apart.

I used to eat this all the time as a child (grew up in Laos), but we always had a chili-dip of some kind. :) Do they use dips in Northeastern Thailand as well?

I have the bamboo steamer and the small lidded bamboo containers for serving the sticky rice but I am at a loss for the best way to clean them. Help! :D

Sure, you can use any kind of steamer that you have. If you use the steamer pot insert, just line the steamer with a clean wet towel and then you don't need to flip it.

Lilmama Taurus you could freeze the leftover rice... to reheat the rice, i would recommend you to steam it until the rice is soft again... i hope this will help...😊😊

It can be done with Korean and Japanese sticky rice but personally I do not like it because its short grain. So I prefer the Thai sticky rice which is long/medium grain. I usually buy 50 or 25 pound bags of it. My area in California has a lot of Asian resources. Like we have fresh cooking banana's(saba in Filipino) too.

What temperature do you boil the water at? Or do you leave it on High the whole time?

You want it boiling to create steam. Water typically boils at 212F degrees. You can start it on high to bring it up, then turn it down to medium or medium high, to make sure that the water doesn't completely evaporate.. which wouldn't cook the rice & might even burn it.

I am wondering if you could tell us more about the nutritional side of sticky rice, and thai food in general. I'm not so worried about sticky rice containing more calories, but eating nothing but white rice, though tasty, seems like it would cause a huge blood sugar spike and then inevitably, a crash. Is anything traditional eaten with sticky rice to mitigate this?

You're supposed to mix it around so it won't be too sticky in certain areas. You're supposed to use a rice basket after. Deip Khow.

Most Thailand ppl put it in a bamboo holder...I don't know the name of it. They also re-use the leftover rice the next day. Am I correct?

I use cooking spray before putting uncooked rice. It works great at preventing rice from sticking like crazy. No change in taste.

I just use the digital rice cooker, that can cook sticky rice too. Its a lot easier no need to soak the rice. Also it can cook rice porridge and much more very convenient.

What's the ratio of rice to water using the rice cooker? and do you need to soak the rice for a few hours?

Tall Can The rice cooker come with measures cup and for ratio of water is inside the rice pot. You have to use a digital rice cooker which can cook different variety of rice. No need to soak the rice.

@@tallcan5112 i believe the ratio is 1.5 cups rice to one cup water. Standard rice used in the rice cooker is 1 cup rice to 1 cup water therefore you use quite a bit less water with sticky rice

I couldn't find the Thai sticky rice so I bought some from the US. I soaked the rice overnight then used a stainless steel steamer lined with lotus leaves to steam for 20 minutes then let sit for 10. The rice turned out to be dry and yellow. The color probably is from the lotus leaves but I don't understand how steamed rice could be dry. Anyway, I made them into tiny sticky rice dumplings with some chicken and mushroom fillings, for dinner. But my ungrateful husband said he wanted Chili for dinner instead. Now, can I freeze sticky rice? Will the freezing process make it every drier?

+Sourdough Girl I haven't worked with US sticky rice, but if it's dry it might need longer steaming time? You can freeze the rice but when you reheat it in the microwave I would cover it with a damp cloth to prevent it from drying out.

Thank you for your prompt reply. I have a feeling that I might have steamed it for too long. Someone else on KZbin says the longer you soak the rice the shorter time it requires to cook. Since I soaked the rice 12+ hours I might need less time to cook? I sprinkled a bit of water before wrapping it in lotus leaves and steamed it a bit more, with hopes that the rice would reabsorb some moisture but it didn't work. We actually ate all the fillings with the less chewy rice then threw out the rest. I guess we don't have to worry about freezing it. LOL

+Sourdough Girl Wait did you wrap the rice in lotus leaves? Or did you just line the steamer with the leaves? If you wrap it in lotus leaves, you prevent the steam from getting to the rice and it becomes a lot harder to cook so would take much longer. If you line the steamer, make sure you don't line the whole rack or you block the steam from coming up through the rack. If you over steamed the rice, it won't be dry, it'll be mushy. I soak my rice overnight all the time, 16 hrs+ and still steam it for 20 mins and is okay.

The first time I steamed the rice I lined the steamer with lotus leaves. It was after 12+ hours of soaking, steamed on high heat for 20 minutes. The rice came out yellow and quite dry. In an attempt to recover some moisture I sprinkled water over the rice, wrapped small portion (1 cup) in lotus leaves individually and steamed it again - hoping the lotus leaves would keep the moisture in and the extra water absorbed - but it didn't work. Maybe I should use med-low heat to steam next time. I saw a different KZbin video where someone added 1/2 cup of water into the rice and steamed it in a ceramic container uncover, for 30 minutes. I am desperate enough to try anything at this point. LOL

Just wash it in plain hot water, no need for soap. If the rice sticks to it, let it soak in water for a few hours and the rice will loosen.

I have an interesting problem and was wondering if anyone else has experienced it and/or has solved it. My mom and dad are 60 & 70 respectively, and have been eating and making sticky rice for just about their entire lives so this is not a question regarding someone who is unfamiliar with the process. And as most people who eat sticky rice, we buy it by the 50# bags full. Our problem is that over the last few years, we have gotten a few bags here and there where the rice isn't "sticky". When you get a handful of rice, it should form a soft clump in your hand. Sticking to just itself and not to your hand or be mushy, if made correctly. The problem batches will easily detatch from the clump while at the same time sticking to your hands. It's not soft and overcooked or overheated nor is it hard and undercooked. The texture and mouthfeel is perfect. the only thing wrong is that it isn't sticky! Has anyone else experienced this? Have you figured out how to deal with it? My dad just chalks it up to "bad rice" while my mom rants on about conspiracy theories about fake plastic rice on the market because she read a tabloid story about it. (Honestly I think she saw a story about the Japanese market of realistic plastic foods that shop keepers display in their windows and she got the wrong idea. But Shhh! She won't listen to me.) They're driving me crazy! Somebody! Please help! lol!

+BeowWulf if the process is not different from before, then there is surely a problem with the rice. do you use the same brand of rice or buy it from the same shop? you have to inform the shop that your rice is not same or just try another brand of rice. i sometimes like to cook it not sticky (enough) by soaking it for a short time and washing the rice many times. when sticky rice is not sticky enough, it gives an unusual feeling :D

Thailand always take credit of most things anyways. lol Sticky rice is more of a Laotian thing but here they're taking credit as if they made sticky rice. Just like they take do with us Cambodians too. I saw a jar of pahut with the Cambodian preah vihear on it but it says made in Thailand. Funny! But yeah, thanks for sharing.

Bamboo has an antibacterial quality, so just simply rinse them with hot water. Let them dry and you are all set!

@mike jones, the lines between Lao and Isaan Thai people, as you should know, are diffuse. They basically speak the same language. More importantly, please tell me a cuisine in which there isn't substantial cross pollination of ideas? I cannot think of one. Where would Italian pasta be without the Chinese?

Making sticky rice is the same process as making regular rice. Don't think I'm talking about with a regular rice cooker.
