I LOVE your recipe for making cottage cheese from scratch. It has such a wonderful flavor and it tastes so much better than the stuff bought in the store. Could you please either let me know how to culture that recipe, or do a video on that? I'd really appreciate that. I have arthritis in just about every major joint in my body, and medications are getting more and more expensive with each passing day. As a senior (although I'm still working), I'd rather spend my money on good food than on medications.

I love this list! I would probably also mention that most studies say that keeping our saturated fat levels at 10% or so of our calories also lowers our risk of cardiovascular disease, so keep that in mind when eating full-fat animal products that tend to be higher in saturated fat. I have upped my vegetables (both fermented and plain) to help to offset this as well, and over the last couple of weeks, I have started losing weight, sleeping better, and to feel a lot better. I also feel like so many people think in extremes when it comes to food (such as all this food is bad/good) that the nuances in this video are very much needed to break us of that mindset. Thank you so much for putting this information out there! I would also love to learn how to culture cottage cheese!

Thank you for making that list, Mary! And for explaining. I appreciate those kinds of lists. I've been making the homemade cake mixes for my pantry, using whole white wheat flour, and they are very good! I can tell they are whole wheat, but my husband can't. I have a package of einkorn flour in my cupboard now, waiting to be used for cake mixes, but also other things. I really want to make more changes, but I'm kind of slow doing it. Another thing I wanted to tell you is that I made the tepache this week, but it isn't bubbly. I think I decanted it too soon. It does taste good to me, though. And I went on to use the rind to make vinegar. So, there was no waste. I will try it again soon, and see if I can do better!

If you need a starting point, all meat and dairy grassfed.
@CarolBondOldDragonMama7 ай бұрын
And remember, start small and add in a little bit at a time, otherwise you could get very overwhelmed by everything. If you struggle to get all grass fed meat and dairy, start with ONE thing. Maybe start with grass-fed milk. Then add in butter. Look for sales on any grass-fed meats, too. One little step at a time. Every little change will help, both your health and financially.

For myself, the best anti-inflammatories are fermented foods, which are brimming with pro and prebiotics. #1 is always milk kefir (it puts every other milk ferment to shame like Greek yogurt, etc.) which is SUPER easy to make, kombucha which not everyone likes, sauerkraut but only the one in the refrigerated section, and kimchi which is also rather easy to make and yes, bone broth. These are all 100% natural. Kefir has been around since the dawn of time and passed on through the generations. It's health properties are absolutely insane. Like you said, it's also important to note that any fermented vegetable has to be purchased from a fridge, not a shelf in a store. Shelf stable foods are normally pasteurized and the good bacteria is killed off. Same for store bought milk kefir. It is MUCH weaker than anything you can make at home because of the manufacturing process.
@MarysNest7 ай бұрын
Yes, I always agree in making it homemade as a first option.

One thing to look out for with the grass fed dairy, especially milk...check to make sure it is not ultra-pastuerized. Ultra pasteurized dairy is heated so high, it pretty much kills all the nutrients. I found that in our area, even at health food grocery stores, all the milk is ultra-pastuerized.😢
