You’re the only one that’s cooking videos I’ve tried! Caldo de pollo, caldo de res, tinga, mole, enchiladas, Mexican rice (so thankful for this one lol), lasagna, birria (AMAZING), albóndigas, and the list goes on... I’ve tried almost all!! No lie, these are the BEST! You make it look so effortless, but this is not for beginning cooks lol....I'm glad I picked a Sunday to make these as they are pretty labor intensive but OMG they are SO worth it! Everything of yours I have made is just amazing, I am so happy to be learning to cook authentic Mexican food. Sooooo I made this yesterday, Friday. I still had the tomatillo-consomme leftover. I added some cheese and some of the shredeed chicken I had leftover. Made a cheese omelette this morning and poured the warm consommé over it. DELICIOSO! my husband ate it as a dip with his tortilla chips.
