Pro Tip: You shell the shrimp before use, of course. Put the shells in a small saucepan with whatever aromatics you like, and cook them down. Strain the broth and add it to the stew - the enhanced flavor is INCREDIBLE!

Enhanced Pro Tip: melt some butter in your sauce pan first, add the shells and toast them well over medium heat, mash them up a bit with a wooden spoon as best you can. Deglaze the pan with a bit of white wine if you like, or a couple teaspoons of vinegar and then water, and proceed as above...

I have to be honest, I never heard of Shrimp stew before. I happened to have all the ingredients (that never happens) so I made it tonight. I cannot wait for my husband to get home and try to this. I hadn't either and it was really helpful. I have never cooked it beyond caramel and wouldn't have the fortitude to take it this dark without seeing someone like AB who I know can cook do it.

I am with you, Sarah and Purley. . I never saw a roux get cooked so dark. I didn’t think it was possible. I think he said that you could have made it more quickly with higher heat, because we are Novice he took a long time with it. It’s just amazing. Thanks to the chef!

What I found truly amazing was that just earlier today, I tried to find how to make a good roux. The 'famous food place" that I looked at said butter is "Only good for making very light roux" and to make it darker you need to use other fats or oils. :O Well, apparently, THAT isn't so!! :)

Although the commons know it as "holy trinity", the actual french term "mirepoix" is the correct answer. a mirepoix "is a three-vegetable mixture to be sauteed to create fragrance and layered flavor in most dishes. Most often items that are available in the regional area define the mirepoix mix. Some of the combinations other than the preferred onion bell pepper and celery, other combinations are onion, carrot, celery... onion, garlic, ginger, and more. --- Love what you do - referred a lot of fellow home chefs to your channel...

That looks delicious. 2 things I would do to level up. 1st I would use shrimp stock instead of chicken stock. It's easy to make if you have shrimp you need to de-shell but if you don't have shells on your shrimp, go to your local Asian or Filipino market and get some Bagoong Alamang which is dried shrimp paste. 1 tsp of that simmered in 4 litres of water for about 20 minutes makes a deliciously flavoured shrimp stock. It's a bit stinky but it is worth it. 2nd I would add a few drops of thai fish sauce. It may not be authentic to the southern US but it adds a smooth salty and savoury flavour that levels up any seafood or vegetable dish.

I made it! I served it with original grits, cauliflower grits and brown rice. Also, ℹ sautéed my shrimp and dipped them in the stew as the longer they are in heat the tougher the shrimp get. Over all the recipe was great! Thank you.

I made this tonight and it was ON POINT! The only thing I would change is, I would lightly season the shrimp first. The shrimp really didn't pick up all the deep flavors in this recipe. AB, your channel is awesome. I'm a quadriplegic and cooking has always been one of my passions and one of the few things I can still do quite well since my accident. The pace at which you do your videos is super helpful and like you say, you're simplifying cooking, while delivering us tasty recipes. Continued success and keep the great recipes coming!!!

Hey AB, I’m definitely going to make this stew. Also, the onions, celery and bell pepper make the “trinity”, a staple in creole dishes. To make this a gumbo, I’d add more flour to the rue and add andouille sausage and some okra to thicken it up a bit. For more heat you could add some cayenne pepper or hot sauce like Crystal. Being born and riase in a country/swamp part of Louisiana, this is one of MY FAVORITE Friday dinner besides Red Beans and Fried Fish..i used 2-3 bags of Jumbo Shrimps and 2-3 packages(mixtures) of Cajun and Beef Sausages..I like my roux.. medium brown lil darker than paper bag..This is one of the few Meals Me and MY Family ❤ besides GUMBO..

I literally came upon your channel by chance about 2-weeks ago (April 2023), searching for something else (i.e., dealing with hair). When I tell you I am hooked. Goodness. I m hooked. Nah, you on point ma boy AB, GUMBO is that color but much thinner. Could be a lil thicker tho. Just add a lil more flour. For those in the back that didn't catch it.
