Tonteki (トンテキ) is a Japanese pork loin steak dish served in a savory citrusy sauce. From start to finish in 15 minutes! Inspired by the Japanese drama - Midnight Diner.

Serves: 2
Ingredients:
¼ onion (core intact for easy grating)
¼ cabbage (to serve)
1 tomato (to serve)
2 ½"-thick lean boneless pork loin chops (½” = 1.2 cm)
Kosher salt
Freshly ground black pepper
1 Tbsp all-purpose flour
1 Tbsp neutral flavor oil (vegetable, canola, etc)
Parsley (for garnish)
Sauce
3 Tbsp ponzu
3 Tbsp sake
½ Tbsp soy sauce

This was perfect! Wilted in some baby bokchoy at the end, rather than doing the cabbage salad. It came out as good as the satisfying bentos I get from Japanese markets in LA. I LOVED the moist crust and super flavorful onion sauce. I can’t believe how easy this is, and how well it works as a late dinner. I didn’t even start cooking this until 1am, and usually I feel bad about not cooking earlier. But this video lets me know that I’m not alone in my night-owl dinner habits, and I am so happy to learn this recipe from you, Nami!

I just finished watching 3 episodes of midnight diner and I have to say, there is something about your culture that is so enticing, simple, magical and real. This is a wonderful recipe, Nami. You always manage to make your food look so mouth-watering. I will be going to Japan in August for the first time. Could it be cooked the same way but, by replacing the pork with beef or chicken or maybe even fish? If so, does it also change the name of the dish? Thank you for your hard work. Have a nice day/night.

Yes, other protein option is okay too. Tonteki's Ton means pork (like Tonkatsu) and Teki comes from Steak, so the name will be different. :)

I've tried this a couple times, but I can't get the pork to lay flat!! I don't quite understand how to make the slits in the pork. Also, is the texture supposed to be more crispy? or is the flour meant to make the sauce adhere better to the pork? Thank you~~ it's still delicious.

Hi Dana! I'm not sure if you have checked my site, but I explained a little more details for that process (Make a couple of slits on the connective tissue between meat and fat on both sides of the meat. Red meat and fat have different elasticity, and when they are cooked, they will shrink and expand at different rates. These slits allow the pork loin chops to stay nice and flat when being cooked and prevent it from curling up.) www.justonecookbook.com/tonteki/

When I was in Yokohama and Fujisawa all the TonKatsu restaurants served shredded cabbage and the tables all had squeeze bottles with a thick creamy dressing that was so good. I still dream about it some times but have never been able to find it anywhere else.

I watched all 3 Shinya Shokudo live action adaptations ( I didn't like the movie very much tho). Mainly because I'm a fan of midnight eating and Kaoru Kobayashi. Which reminds me Nami-san, have you seen Kodoku no Gurume? I think you'll love it.

Anindya Sylva you can probably just leave it out, it won't have the exact same taste but should still taste good

I agree. Shouldn't be a big deal. Sake helps to reduce meaty scent. I would use grated ginger or some kind of citrus juice for this purpose. She uses grated onion which is also a good idea. Try to use water/dashi broth instead if you worry about ratio of the liquid.

Made tonteki with this recipe, the sauce was pretty salty so I adjust with sugar and taste better for me :) Thank you for this easy recipe!

Thanks for trying the recipe! Each ponzu brand is different (I use imported Japanese brand of ponzu), so I'm glad you adjusted. Also cooking for long time will concentrate the flavor (evaporate the water), so we must include that in mind. Thank you for your feedback! xoxo
