Hi dear, great recipe. Just a correction to a statement in your description box. In St. Vincent, it is also known as fried bake but usually simply called "bakes" (whether singular or plural 😀). I have heard it referred to as fried dumpling in Jamaica.

Farry Ali you can definitely add grated coconut to this recipe. If you are using freshly grated coconut remember it would already have moisture so add a small amount for starters. Don't use water. I only use baking powder in my bakes. Let me know how it goes.

I like mine with a little bit of honey drizzled on top with hot tea or coffee. 👍
Yesterday, I did some bakes using this recipe but with some additions: a few dashes of cinnamon, nutmeg, ginger, clove and (here's the kicker) half of a *fully ripened banana* (mashed). Trust me, that banana _really_ gave it a certain _oomph_! I think I'll try a whole banana next time. (Of course, due to the banana's sweetness I would need to reduce the amount of brown sugar a bit.)

I remember the first time I tasted a bajan fry bake I was about 15 years old and the bake had a sweetish taste. it was soo good. so when we returned home I decided to make some myself mind you I could not cook and ended up burning myself. I have scars to remind me. this bakes you made sounds like the bakes I had so many years ago!

I tend to experiment with recipes to see what flavours might develop (not that the results are always pleasant) and the banana enhanced this like you won't believe. I gave some to my elderly neighbour and her sister who's staying with her and they both raved about them, so much so that the former now wants to buy a dozen _every_ time I do some! What the _heck_ have I got myself into? lol (I wonder what would happen if plantain was substituted for the banana. Hmm ... ;) Anyway, keep those recipes comin'! By the way, I haven't seen one of those graters in a while (the one in the photo in the header your KZbin channel's homepage). They're the _best_ for grating coconut IMO. Food processors pale in comparison. God Bless

Can you use olive oil? and how do you know when the bake is fully baked?

Yes I used olive oil to make my fry bakes. Allow your frying pan to hot then lower the stove to medium heat. Put the dough in the frying pan and allow the fry bake to cook on the bottom side for about 3-4 minutes - the bakes will begin to rise and get brown. Turn over and allow the other side of the bakes to get brown - this should take another 3-4 minutes. I hope this answers your question. Thanks for watching and taking the time to comment.

You will need some sort of rising agent maybe you can use about 1/2 teaspoon on yeast if you have that. Experiment with it.

+seygra20 Yeah, you're right about the white flour. We've recently been producing healthy alternative flours in Barbados: cassava, sweet potato and breadfruit. I think all three could add interesting twists to this recipe.
