There's a technique where you fold part of your knuckles under your hand. This means that you have a barrier to protect your fingers. Another tip is to go slow. I'm not a professional chef and don't try to do things the way they do.

I was totally scared of that too but when I fold my fingers (like the above comment) and practice slowly, it was all good. I was much slower in the beginning!! haha takes lots of practice

Yes ! It's the best ! It was what* got my Mum on the vegan train. We used to get a different vegan mayo that was delicious as well, but it wasn't familiar to her. Seeing the Hellmann's label was comforting to her. It's the same reason we use becels vegan margarine :)

I make this all the time. I put Chopped roasted red peppers (jarred), frozen peas, vegan cheese, and a dash of apple cider vinegar. You are correct- it’s a very good potluck dish because just about everyone (except gluten free unless you use gluten free pasta) can eat it.

I saw this sam merhod of chopping carrots in an adian film 20 years ago...however the man kept them in a row and then sliced them. I find that much more expedient. However..it is nice to see . Love this!

Mayo and relish to recipe tip. coat the bowl with the mayonnaise and relish first and then put the ingredients in last. it mixes up faster.

I don't even like ketchup but I use it in cooking all the time. If I make something like chili and it's too acrid or spicy just a tablespoon of ketchup makes it sweeter and more familiar and tasty. The combination of colors in your food is beautiful. Did your mother learn how to cook from her mom? Did she work in restaurants before you opened the cafe? (Hope that's not too personal.)

try putting gherkin juice in and gherkins n try yellow mustard omg tastes like big mac sauce .. no ketchup ...just mayo 1 cup .. yellow mustard x 2 Tbsp and quarter cup of gherkin brine ...omg im telling you big mac sauce cold pasta ....well just if you wanna try it ....love your chopping skills ...i just learnt box carrots but found it to waste carrot n im not a fan ...so i ate em hee hee ...waste not ...want not ...
