when i make viet coffee (I'm viet) i usually screw the filter press thingy mabobber tight so that the hot water doesn't run through the beens too fast so that the flavors can seep through. This creates a darker and more satisfying viet coffee since you like dark coffee. The condense milk is there to give it a refreshing taste, but the darkness and richness of the coffee is the star of the drink

Vietnam coffee 'Phin'(coffee filter') is one of the most ancient and primitive way of brewing a cup of coffee that most Vietnamese still enjoy today. Most modern coffee shops are using espresso machine or similar machine to make coffee now. There are two type of 'Phin' that you may find at your local asian market. One is the original 'Phin' with the screw in the middle to help screw down the pressure plate. And the other is the newer version with out the screw in the middle. I believe the newer version was created, cause the original 'Phin' with the screw in center confuse foreigner and first time user. Here are easy steps to properly use the Vietnam coffee 'phin'(coffee filter). 1. Grind the coffee beans to semi coarse texture. It should not be powdery or too coarse, it should be somewhere in between those 2 textures. Too coarse will cause the hot water to run right through it, and too powdery will cause it to clog up your filter. 2. Put the ground coffee into the 'Phin', the amount is up to you depend on how dark you want your coffee to be.(for most people, the ground coffee should be slightly above the inner ring of the 'Phin'. You can put a little bit more or less depend on your taste). a. For those with the original 'Phin'(screw in center), screw on the pressure plate that comes with the 'Phin' to firmly compact the ground coffee. Than unscrew the pressure plate a couple of turn to allow room for the ground coffee to expand when you add hot water. Add hot boiling water until you can see the water slightly above the pressure plate, and stop for a few second to allow the ground coffee to expand. Proceed to fill the rest of the hot boiled water to near the top of the pressure plate shaft. If it drip too slow, you need to unscrew the pressure plate a couple more turn. b. For those with the newer version 'Phin' with out the screw in the middle. After you put in your ground coffee, hold the pressure plate shaft or handle with your fingers, and apply pressure with a twisting motion downward to compact and spread your ground coffee evenly. Do this a few time to firmly compact you ground coffee evenly. Leave the pressure plate on top of the ground coffee and just add in hot boiled water and enjoy. This new type of 'Phin' makes it simpler and easier to use, but it took out the fun of brewing your own perfect cup of coffee the ancient way. Use the following mixture ratio of condensed milk and hot boiled coffee as a guide only. One part of condensed milk to two part of hot boiled filtered coffee, 1:2 ratio. Adjust the ratio to your own taste. It will take a few trial and experiment to create your own perfect cup of coffee. I would recommend buying one of these 'Phin' even you already have an espresso coffee machine at home. Just incase your espresso machine breaks down, you will always have this tiny 'Phin' ancient brewer as a back up. Btw, Emmy did a wonderful job in showing how to use the Vietnamese ancient and primitive way of brewing a perfect cup of coffee in a 'Phin'. Thanks Emmy.

I have made over 25 trips to Vietnam for work. The ride from the midwest USA is long and I get in at 1am. Next morning, 7AM I start with a bottle of water, a tylenol, hot bowl of pho and iced Vietnamese coffee. After that I'm a new man!

I recently visited Vietnam for the first time. The coffee was absolutely delicious and I feel like the US could learn a thing or two about what makes a delicious cup of coffee. So now I’m back home and I am dreaming of viet coffee and trying to figure out how to make it myself. I tried your method and I would say it’s pretty darn good. Thanks.

You can use the lid of the filter turned upside down as a tray for the filter when you take it off the cup :)

I'm extremely interested getting one of those! That looks delicious. I've recently discovered how great agave nectar is! Now, instead of adding cream and sugar, I just add a bit of the nectar. I noticed that I can really taste the flavor of the coffee with just a bit of sweetness.

I remember the first time I had a Vietnamese coffee at a Vietnamese restaurant in Calgary, AB, Canada. It was indescribable. After a delicious Vietnamese meal, the coffee was a perfect ending. If you like iced coffee, you will love Vietnamese coffee.

You can make it at home in the states or anywhere. Take 5 mins to make just like your regular coffee. If your the lazy type then buy instant vietnamese cafe packet and just put a teaspoon of condense milk and ur good togo.

Egg white helps to hold the coffee grounds together in the absence of filter paper. Cafe du Monde brand is available in most Asian markets - it's pre-ground, French roast coffee with chicory, and is what many of the restaurants use around here. If you want a good French roast coffee works - as does brewing it in a standard drip filter coffee pot - 10 cups at a time... like a Mr. Coffee or a Braun or Krups pot does. Pour a little condensed milk into a cup with ice, then add the hot coffee, stir, and serve... You can do frou-frou for parties, or bare bones for daily consumption - the choice is yours...

I know a lot of Vietnamese customers at Starbucks that get 4 shots of espresso 4-5 pumps of white mocha sauce and put in a large cup with ice. Very popular I was told it tastes just like Vietnamese Iced coffee.

I drink iced coffee every morning! I pour Starbucks brewed iced coffee in a glass with ice, then a little unsweetened almond milk on top, about 5-6 drops of liquid Stevia, and when I'm feeling indulgent, a little squirt of Hershey's syrup. I'm going to have to try this! That little filter is adorable!

I have the little pot filter, but my family has a tiny metal pot that looks like a small metal kettle or tea pot with its removable metal filter makes awesome coffee. Been in the family for a long time.

I recently just went from hating coffee to really enjoying it. I normally have mine with a cup of ice, coffee 3/4 of the way up a little less than a quarter of French vanilla non dairy creamer and finally two packets of sugar.

Ca phe sua da (Vietnamese iced coffee) is still one of my favorite ways to drink coffee. When I was young, my grandma would make hot Vietnamese coffee and we'd dip baguettes in it and eat it as a simple (but highly caffeinated) breakfast :]

I have two of these Vietnamese filters, but sadly that have sat in the cupboards for years because I didn't really understand how to use them. Thank you for this video. I usually just put a few splashes of skim milk with a squirt of chocolate syrup into my coffee and drink it like that. Homemade mocha lol.

Coffee...sugar and flavored cream, so much that it doesn't even resemble coffee when I"m done. LOL I like it both hot and iced. I usually do french vanilla flavored coffee with either caramel macciato or chocolate mocha creamer.

That's interesting. For the longest time I only drank my coffee black---until I discovered Vietnamese iced coffee. Now, I still drink my coffee black, but when I'm at a Vietnamese restaurant, I'll order this. I will definitely have to buy a phin filter and make my own at home.

im vietnamese also and i love the coffee but i like mine with a load of condensed milk because i hate bitter stuff and when i was lkttle i used to drink condensed milk with hot water as milk with bread u people should try kt i guarantee that it tastes delicious

I'm not the biggest fan of cold coffee, but I like normal coffee. I most of the times add a lot of milk to it, because I don't like very strong coffee.

For the best taste, use dark dark coffee. French roast is the most common (or Cafe Du Monde)

Bulletproof coffee: 1tbsp cream, 1tbsp coconut oil, occasionally 1tbsp butter, add coffee, add calorie free flavour syrup, then immersion blend the heck out of it until the top is frothy.

Without the ice, it's called a cafe bombon, which is apparently a Spanish thing. Amazing how two entirely different parts of the world have something so similar. I do remember that one guy made a cafe bombon, added ice, and called it a Vietnamese coffee. Then everyone LOST their MINDS.

I feel like I"m invisible.Thankyou Emmy! I LOVE this. Hope I can find one. It's so compact and cute! I am a coffee freak and I heard this way-doesn't matter which countrys version-is the strongest and best. I am drinking a mocha iced coffee from McDs as I write! Never had much success making it at home tho. I drink hot or iced ALL year 'round. Zulily just had a French press for $15 a few days ago. Almost got it but kinda glad I waited because I like this one better! And it is about thr same price as ONE iced coffee or frap etc. Lovely. I like DARK DARK DARK coffee very xtra strong. Seems this might be perfect for me.😍☕🍵👩

I LOVE coffee, in every way or form, but since I'm portuguese my favorite is a good old espresso, and because I drink 5 or more in a day, I only add 1/2 coffee spoon of sugar to it, any more and it's way to sweet for my taste. Funny thing, in the summer I normally order an espresso and a glass with an ice cube aside, to pour my espresso after I've sweeten it, it's iced espresso :D
