How to make Vietnamese Pickled Carrots and Daikon

Pickled Carrot & Daikon
Ingredients
1 large daikon
5 large carrots
2 tables spoons kosher salt
2 tablespoons granulated sugar
[Pickling brine]
1 cup white distilled vinegar
1 cup sugar
3 cups water
2 tablespoons kosher salt
Directions:
1. Begin by washing and cutting the carrots and daikon into 2-inch long julienne strips.
2. Transfer the prepared vegetables to a mixing bowl and rinse them thoroughly under cold running water.
3. Once rinsed, drain the vegetables.
4. Sprinkle granulated sugar and kosher salt over the carrots and daikon, giving them a gentle toss to ensure even distribution. Allow the mixture to rest for 15 to 20 minutes, allowing the flavors to develop.
5. After the resting period, repeat step 3 by rinsing the carrots and daikon once again under cold water.
6. Prepare the brine by combining all the necessary ingredients in a separate bowl, stirring until everything is completely dissolved.
7. Transfer the rinsed carrots and daikon to a suitable container, followed by pouring the prepared brine over them.
8. Seal the container and store it in the refrigerator overnight, allowing the pickled flavors to infuse into the vegetables.

This is low key one of my favorite easy things to keep in the fridge. It compliments so many dishes. I always have a batch ready to go. When I'm feeling fancy, I add a finely sliced shallot in there with a slice of ginger and one star anise. You can use the same method for pickled Thai chilis too.

In the Carolinas we add peppers and call this "chow-chow". Its considered a condiment to be eaten on top of cabbage or greens.

In Philippines, we call it 'atsara'. We usually use different veggies like semi ripe papaya, carrots, bittermelon and a lot more.

Bro, how do these Viet guys always have the perfect hairstyle as I've got good hair, the Dyson, round brush, hair serum, and pomade. And every time my old barber who moved away 😢 did my hair, I would get that level of volume, but when I do it myself, I can never properly replicate it.

One jar can last for a good 2 days, but ideally, you want to make just enough to eat for one day because of the freshness of the veggies.

Gennuine Question...why toss them in salt and sugar when you rinse them again afterward and then put them in a mix where salt and sugar already exsist? Only rinsing with whater whould be also ok...

I wash my vegetable before i cut it ,the nutrient goes into the water when u wash off after u cut it.

He washed it because he salted it. The salt makes it pliable and ready to accept the solution. But you don't want the salt residue or it messes up the flavor. This is Pickling Technique 101.

It’s holds for a very long time since it’s being pickled/fermented in that brine. But if you need an estimate, I’d say anywhere from 6 months to a year. It all depends on how you store it as well.

I've seen this happen so many times and I fail to understand why wash carrots, radish, cucumber etc etc *AFTER* cutting them. To me it's washing away the nutrients. So why do that?

No boil brine water? They usually tell us but i usually do it quick way not copk water just throw in whatever veggies n brine in or add garlic onion chilly ginger veniger then use brine water as nuoc mam' taste like fish soy sauce im vegan.
