Yes, your second pronunciation of kefir is correct one, something like qeffir would be correct English pronunciation

I mix my yogurt curd with ricotta 1:3 ratio. That way the yogurt curt doesnt over power. I also mix it with queso Fresca for enchiladas I use the same ratio 1:3. I have even miked it in my sour cream to stretch it in a dip 1:4 ratio. Hope that was useful.

Whey can be applied topically to the scalp to eliminate dandruff. You leave it on the scalp for 30 mins and wash your hair. It is the most effective treatment I have ever used :)

Wow, thanks for this. I'll try it. My husband has a really flaky scalp. Tried so many topical treatments. He's now on a zero to low carb diet and it's helped enormously. - oxalates and lecthins from fruit and vegetables - no good for us.

As a type 2 diabetic, I can tell you that when I use whey in homemade bread, my blood sugars will still spike - however they come right back down naturally without having to take insulin. For me, whey is a HUGE game changer!!

I know this is a really old video but I used acidic whey in homemade soup (both beef and chicken) and it adds a richness to the soup. When you eat the soup made with whey, you feel full and satisfied for a long time.

Great! I've been on quite a yogurt making binge & have all this whey. I also happen to love making soup, that, incidentally almost always includes beans. Double use then - soaking beans and using it as part of the broth. We eat most things homemade, but whenever I can increase nutrition< I certainly try. I have a saying - no vegetable in the house is safe when I'm making soup 😄. If and when I make muffins, they're ALWAYS with some kind of fruit or vegetable, low on sugar, with dashes of good grains and seeds. I like using dates as a primary sweetener.

You can also apply to your face, first wash your face with a soft cleanser, then apply whey to the entire face leave on for 35 mins, then wash with warm water, then apply a good natural moisturizer. It leaves skin nice and smooth, helps reduce fine lines and also helps with acne.

When I make cheese I save the whey for a number of different things, soaking grains, stews, etc. You can also feed extra whey to chickens, pigs, and dogs. It's very good for them. But one way is to make a Creamsicle drink. It doesn't matter whether you use sweet whey or acidic whey to make it. Instead of using water to mix up some frozen orange juice concentrate use the same amount (3 cans) of whey. Add a little bit of vanilla to taste and if you like add some sweetener of your choice such as stevia, xylitol, sugar, honey, to taste. Once chilled this is a super delicious drink and kids love it. Thanks for this - will be trying out whey as a drink/food for my dog who sometimes gets an upset stomach. She's elderly, raw fed. Was just listening to Dr Ian Billinghurst (pioneer of raw feeding) and he mentioned dogs (wolves) were exposed to dairy if they hunted and ate young animals who weren't weaned.

You can use whey to feed the sourdough starter. You can feed to to chickens. You can use for pancakes and waffles. You can water your Tomatoes plants with it. You can make lemonade with it... there’s no way you can run out of ways to use whey!

Hi Mary. I just commented over at your cream cheese video about making two successful batches of the cheese. I had a lot of whey leftover and I found a recipe for caramel that I made my own. It's a great treat for the family on Xmas eve. It's just two cups of whey, a cup of sugar, a half stick of butter, and a pinch of salt. I brought it all to a boil and then let it simmer and stirred it up until it was thick and had a nice brown color. Stuck it in the freezer until it was a solid brick and let the kids eat it. They loved it.

I love using yoghurt whey to make cultured buttermilk! Easy, affordable and only 2 ingredients - regular milk (warmed gently to increase rate of bacteria inoculation) and yoghurt whey! And just wait the time off (I do it at night and leave it overnight so waiting time is no problem). Saves lot of money instead of buying cultured buttermilk from the stores.

@@miar600 I use the buttermilk in smoothies which makes the smoothie taste more like a yoghurt smoothie, and in curries to replace the coconut milk/dairy milk. Or I drink it straight up as a drink by itself, sometimes adding a little honey to sweeten it up.

Loved your style of explanation ... We make our own cottage cheese (Paneer)regularly and and use up the whey to make the dough for the rotis (indian breads) we also use it up instead of water in our gravies!

I discovered your channel a few days ago & love it! I make my own yogurt almost weekly and use whey in two ways: 1. For bread making using the whey as the liquid. I found the bread rises better & is less dense. 2. In green smoothies with bananas, berries and spinach as a quick meal substitute for breakfast or lunch. I usually use all my whey within a week. I didn't know it could last long, so that's good to know.

I just love all of your videos! My bread maker has a yogurt setting that I have used to make yogurt for a while now, but I always discarded the extra whey. Since watching your video, I’ve recently used it to make overnight oats and I just add a couple of tablespoons to each jar/serving. It doesn’t change the taste but I feel good knowing that I’m adding additional probiotics. I’m going to try the other uses you’ve instructed as well. Thank you!!!

Yes! I make my WW Flax sandwich 🍞 bread using my whey from my Homemade yogurt. I use 2 1/2 cups to my 6 cups flour for a 2 loaf recipe.

Great ideas Mary! I like to soak my steel cut oats in whey ( per “Nourishing Traditions”). It gives a nice little bit of tang, plus they cook faster. I also add a bit to my dog’s and cats’ food, and enjoy drinking it myself too!

I use whey instead of milk in my scrambled eggs, omelets, mash potatoes, and cook my potatoes in whey when starting my potato soup. I have been working through your videos since 14 May 2020...it has been great, my husband loves the yogurt, cream cheese, and ice cream ...in fact I haven't made anything that he hasn't liked.😀

Hi Mary, greetings from Germany😀 Thanks for the video. I used the whey I got by straining yoghurt in replacing the water part in bread baking. Got a lovely white loaf from my breadmaker. the whey left over from making cheese can also be churned to make butter with (in dutch we call that weiboter) it has a greater (slightly cheesy) flavour, but keeps much less well than regular butter. When used to fry meat, it'll give a softer texture on the outside (not as crisp), but still lovely. another use would be any other use butter has. Keep in mind that you do get less whey butter from the same amount of liquid, than if you were to use fresh milk. Some do proclaim it's healthier than butter.

Thank you so much for the tips! I’ve been experimenting with new ways to ferment and this video was really helpful. I just made my first batch of homemade yogurt and plan on using the whey for a Scandinavian fermented lemonade! And to make a closed loop, I will be using the lemons peels to make an oleo-saccharum to flavour the yogurt :)

I have added some whey to my mug or bowl of soup, don't actually need to heat the whey, just put it in the mug/bowl before adding the hot soup. I have also used some whey in bechemel and similar sauces. great in pancake batter too.

Thank you for this videos. I love that you teach us about the ingredients and how they work.I have watched many and have been trying to incorporate them into our lives. My adult daughter is special needs and requires puréed food. I have been giving her otc probiotics but would much rather use something natural. About every six weeks I make a broth (I will be using your beef bone broth recipe from now on), cook up the vegetables she is able to eat in the broth, purée them, then put in containers and freeze. I pull one container from the freezer and make 3 days worth of her “stewp” at a time by adding in ground up chicken, turkey or ham. I found that beef is very difficult to try to purée so I have been using beef shanks to make the broth. My question is, should I add the WHEY to the vegetable purée then freeze? Or wait and add a 1/4 cup? of whey when I make her three days worth of food? Does freezing hurt the probiotics? I know you said that WHEY can be kept in the refrigerator for up to 6 months, can it be frozen, thawed then used? I so enjoy your videos. Blessings to you.

whey caramel is a great option to help use your whey. I make it to use as topping to my homemade icecream. I also make ricotta cheese. From a 4 gallon milk I can make pizza style block mozzarella yield 4 pounds of that and 1 pound of riccotta. It's like magic! lol

We call it hung curd, which we use for making mughlai or some indian sweet dish called shrikhand. And the whey I just drink it up 😀😀😀

Has anyone experienced a white cloud forming on the bottom of your whey after a couple weeks? I made it for the first time a few weeks ago and there is a little foggy blob towards the bottom of my jar. I was careful to use clean spoons whenever using whey to avoid contamination. Should I toss it and start over? Thanks internet friends!

Hi mary I saw ur videos I like the smile on ur face . I am an indian . We have traditional kitchen we hardly use processed food . we make paneer , ghee, curd (yogurt) at home . wen we make paneer at home we use curd to split the milk instead of using lime or vinegar , so wen we get that whey we make our chaas (butter milk) in which we blend some fresh curd salt and roasted Jeera powder also the whey wat we receive from making paneer which is not very tangy mostly its bit sweet . Same whey we use for making chapati that is Indian flat bread without any dilution with water just wanted to know that can i use this paneer whey in making breads? Also for cream cheese I blend the paneer with little of this whey it turns out really creamy can be also use as a veg substitute of mayonnaise or can be flavored to various dips . can be used in cooking rice for pulao or Biryani.

Wonderful video! Can I use my yogurt & paneer whey to ferment the whole grains I make for my hens? I'd like to get the tannins, etc off of the outside of the grains like quinoa, amaranth, etc. My chicken friends' digestive systems really benefit from probiotics. Thank you so much for sharing your passion and knowledge! Moving to a non-processed diet has helped the MS I live with to improve in every way! 🙏

I used some whey to ferment red onions with garlic and peppercorns, they are so good. I also use my whey to make my mayonnaise so it will last longer.

According to the food nutrition labels, around 6.8g in yoghurt and 4.6g in cream cheese per 100g so it's fairly low in carbohydrates.

Hi Mary, I enjoy a lot your videos, thanks for being so inspiring. I wanna share how I use whey: I use it to preserve meat as I dont have a refrigerator, I put some pieces of meat in a glass jar and cover them with whey mixed with salt and herbs. So far I have had very good results soaking it for 3 days, I hadnt venture in doing it for longer time. I do the same with kombucha when it has turned kind of vinegary but it only last 2 days. Probably it would go longer in a rerigetaror. Both taste really good and the meat is super tender.

You can but the good bacterias will compete so it’s best to do them separately for maximum nutrition. ❤️🤗❤️

i am learning so much from your videos! so glad i googled "what can i do with whey" and found you! i'm about to pickle some cabbage and ginger and i make bread too, so i'm looking to use as much whey as i can in different ways.

I am new to whey and it's uses. You mentioned making sandwich bread with all-purpose flour, my question is: can I use bread flour and substitute whey for all the water? I enjoy your video's a lot. Geri Albro

When I make a cake, I sometimes replace the water with milk. Will it cause a bad reaction if I use whey with the milk? For example, if the recipe calls for two cups of water, could I substitute 1 cup of water, half a cup of milk, and half a cup of whey? I'm new to this and am finding your videos extremely helpful. Thak you!

I make a lot of Greek yogurt and have a ton of whey… whatever I don’t use for baking before I make my next batch of yogurt, I use as a fertilizer in my food garden (tomatoes love it). Dilute it a ton tho

Did you know that there is a tradition of making butter from cheese whey in Britain which goes back to, at least, the Anglo-Saxons? It is rarely done these days because it takes a LOT of whey to make a pound of butter and it's very labour intensive.

I make jocoque is leaving the milk on a warm place 2 or 3 days till become solid and I separated the whey the milk becomes solid put salt and we Eat it as sour cream

Can you do this same thing with cottage cheese (curds & whey)? Would there be much difference in the whey from different source, such as yogurt vs sour cream vs cottage cheese, etc?

I'm thinking I can add a 1/2C to my rice cooker when I make some rice for my lovely rice bowl dinners. Rice bowls, btw, are an excellent fridge and pantry cleaner. I put about to turn produce, about to expire canned beans, and even frozen veg that's been kicking around too long in with, or on top of, my rice bowls with other fresh ingredients and dressings I want to get rid of.
