The one that looks like authentic pounded yam, is it from the one blanched with citric acid?
@mekashealingjourney Жыл бұрын
Yes and also without but blanched.

I mixed it so essentially citric acid is not necessary in my opinion

Overwhelming majority of the pounded yam flour in the market don't contain any yam. It is a blend of potato, rice and other flours. I have tried the same experiment but came out with something like amala too. I need to put it in boiled or boiling water for a longer time. Thanks.

All the very best. I find making my pound yam using fresh yams is more effective and easier. I love using the yam flour for baking.
