This is a nice, easy recipe. Thank you for posting it. It seems similar to a sourdough starter that I feed and use for yummy sourdough bread a few times a week. Here in the USA, people have been buying and hoarding the commercial jars of yeast. Your recipe solves the problem of no jars of yeast at the stores.

This video was helpful but I made a modification. I didn't use curd (also known as yogurt); just all purpose flour, sugar and honey. By day two or three on the counter, it had a very nice sour smell with bubbles on top. Not wanting to waste flour if things turned out wrong, I used a quarter cup of this mixture with a cup of flour and turned out a fantastic piece of bread with a mild sourdough taste. The loaf will be bigger next time.

I had a question: If you want to store for a longer time you use 1/4 cup flour with 1/4th cup water, so what will happen to the remaining yeast? Do I measure that too? And do accordingly? And then store separately? The remaining yeast?

Hi dear, definitely we can do without curd , curd is added to make the fermentation process quick , can do with only honey ,flour and water . It might take little longer than 20 hours for the results . You can start using after 20 hours or once you see nicely fermented batter, you can start using ,that will work .

I have a query regarding feeding of this yeast. Do I need to take it out from refrigerator, then add flour n water as u mentioned to the cold yeast, or shall I bring it to room temperature before feeding? And also after feeding the yeast do I need to keep it in warm place like first time for 18to 24 hours, then place it back in the refrigerator? Sorry for this long post, but please explain....I m bit confused 😐

Hi , for feeding you can use it directly from the fridge cold one and add flour and water...after feeding leave it on the counter for 3 4hours initially to chk every time if the yeast is still active or not ...by then it will bubble up and then you can put it back to fridge ...it won’t take longer than 4 hours ...the older the yeast will be ,the lesser it will take to ferment ...hope your doubt is cleared 😊

Nice recipe. I made it and kept it inside coolers which I use to make curd, for fermentation. You r taking 1/4 th or 1/2 of the fermented batter and you r feeding with same amount of flour and water. What about the left over fermented batter. What should we do with that If we r not baking? Thanks for sharing.

Hi Savithri, In the video I used 1/8th cup measure yeast, flour and batter... 😊. You can use whatever measure you will need for your next recipe just that all 3 should be in same quantity . I usually make pancakes with the remaining batter. leaving about 1/2 cup yeast to use for next batch. Let me know if you want the pancake recipe 😊

Savithri Chandrasekaran sure😊 ...how I use is ,use this yeast batter(1cup) add any flour available usually add rice flour(2cups) and oats flour(1/2cup) with some grated coconut(1/4cup) ( can add veggies also ) and keep for 15mins (to ferment)and then make savoury pancakes 😊

kaveri gupta it will take longer than 15hours as these days the climate is cold ...so it may take about 20-24 hours also . And about the taste and smell , it will be similar to how it would be with normal yeast.

To check the yeast , feed them once and check how long it’s taking to ferment or bubble up , accordingly you can get an idea if the yeast is active or not 😊 Also ,on the day when you are preparing the recipe do not feed them , it has to be fed the day before.
