In this video today I am going to show you how to grind soy flour at home.
Soy flour is gluten-free flour, and great for baking as well as making 𝐆𝐅 𝐜𝐡𝐚𝐩𝐚𝐭𝐢 𝐟𝐥𝐨𝐮𝐫 𝐛𝐥𝐞𝐧𝐝. It is made by grinding soybeans. I often grind my own flours because when commercially ground alternative flours do not display the words "gluten free" on the package, this means they can be unsafe to consume for someone with celiac disease or gluten intolerance or gluten sensitivity.
To grind soy bean flour you can either use a home grain mill, or a high speed blender (with a dry blade). A regular coffee grinder will not work for soybeans as they are tougher to grind. I have Vitamix for some 15 years or so and I love it. It has been working really well for me to grind different grains and legumes.
𝐒𝐨 𝐭𝐨 𝐦𝐚𝐤𝐞 𝐬𝐨𝐲 𝐟𝐥𝐨𝐮𝐫, soak rinsed soybeans in clean room temperature water for overnight, about 12 hours. (Before soaking, make sure there are no foreign objects like small stones or debris)
Soybeans expand two to three times so use a large bowl and enough water to soak. You need 12 hours of soaking time because you need to remove the soybean skin.
After 12 hours, take some beans in a pot and rub it vigorously with your hands or heel of the hand or a potato masher. What you are really looking for it is to remove the skin as much as you can. So do whatever you like.
Put a medium hole sieve over a large bowl. Add enough water to the rubbed beans, swirl it with your hands so that skin floats to the top. Immediately drain through a sieve before the skin sits down.
Reuse the drained water to wash the beans again. You may have to do it 4-6 times. It a tedious process but really worth to remove the bitter beany taste of soybeans. Once the skin is all out rinse the beans with fresh water.
Allow it to drain in the sieve for 10 minutes.
Spread out the washed soybeans on a cookie sheet or baking pan lined with clean towel.
Let the soybeans dry in sun or boiler room or dehydrator. They have to be completely dry and cool before processing them in the grinder.
Place two cups dried soybeans in Vitamix dry blade container. Secure the lid, turn on the machine and slowly turn your variable speed dial to 10. Keep the machine running for two minutes. Make sure the high speed variable switch is down. We are not going to use this.
After two minutes or when the flour stops circulating. Stop the machine, use the spatula to stir the flour. If it hasn't finely ground, process again.
Sift the flour with a fine flour sifter, and reserve any unground bits that remain in the sifter.
Repeat the process of grinding and sifting until all the soybeans are used.
In the end reground the coarse soybean bits that remained in the sifter. When the flour is ground it will be hot, wait for it to cool before storing in a container.
It can be stored at room temperature for 1-2 month and 5-6 months in the refrigerator.
