Called “lost bread” or “pain perdu”, the simple recipe called for stale bread to be soaked in a mixture of milk and eggs and fried. Sound familiar? It should, pain perdu is what the french call french toast today. Americans got their first taste of french toast when an innkeeper in Albany, New York replicated the dish in 1724. I think this is the first time I've see Caphalon win a cooking vessel competition! I got a set a few years ago, discontinued style, sold at a Calphalon Outlet store. Three ply, and it works great, holds up, and all-round pretty wonderful. (No, I don't work for C.)

I'm pretty sure that's why the Calphalon won, because the handles are more horizontal than vertical. They didn't mention it, but I noticed. 😉

THEversion of EGGS with smoked salmon really looks great, as there is ALWAYS smoked Salmon, in house, not always asparagus, there is a dish of aspagarus, green beans , hard boiled eggs, with olive oil,pepper & salt, from LIDIA I make often enough, , for myself, . CHERIO🇺🇸🇺🇸🇺🇸🇺🇸

How about blooming the spices and browning the butter first, letting it cool, then add it to the eggs and milk? Also, Browning butter and spreading that on the baking sheet for even more flavor? YESSSS!!!!

OK we made the french toasts tonight - I'm on a diet so I didn't partake, but the diner gave an enthusiastic thumbs up! Oven baking/broiling worked great, looked just like they were done in a skillet/griddle. Of note, pay attention when they say work quickly while placing and flipping the bread in the custard, the bread does absorb the custard quickly. I didn't work as quickly and it had little effect on the final result, but a few of the toasts weren't quite as coated/browned as well on the bottom.

Scrambled eggs with smoked salmon is called kedgeree here in the U.K. Love it! I sometimes add a little, very little, curry powder or paste. Yum,!!!!!

@@garyf3470 depends on the fish. You can use haddock, smoked or unsmoked, if you wish. Also fresh salmon or, as in this case, smoked. Kedgeree is really what you want it to be. It can be made with hard boiled eggs, rice, fish and curry if you wish. Curry because of its Indian heritage.

The french toast is happening in my kitchen this weekend. Brilliant! We're apartment dwellers so unfortunately I have to cook on old school electric coil rings so I find the Lodge cast iron skillet evens the heat out really well. The scrambled egg dish looked really nice but for my old European tastes it looked a little too well done, I've got my Americans (Wife, Son) to accept softer eggs and I only once had to threaten him when he took his breakfast to the microwave. "You want me to cook? Then you eat my cooking." said in my most outrageous French accent.

I have given up on making French toast at home, but your recipe looks fantastic. I am planning to make it this weekend and am so hungry for it right now at 9:30pm!! Great job. I've noticed the slices of bread used in the video were very thin! Will this work with regular store bought bread as they appear to be thicker than shown? Well, at least in my area the sandwich bread in the stores is a bit thicker. lol

Love the easy French Toast (but you gotta use sourdough!) My only question/concern is that most of us do not have your high-end wall ovens that broil so evenly. I hav a gas range oven and the broiler, while strong is just a strip down the middle from front to back making it impossible to brown an entire sheet pan of bread.

I actually make French toast with a bit of pepper in it. You can't even tell it's in there. Will those griddles, that fit over two burners, work on an electric stove? I ask because not everyone has a gas stove.

What about the olive oil makes them fluffy? I've only ever used dairy for scrambled eggs so I'm curious what other liquids like the oil perform the same function

I think they said that dairy allows the egg proteins to bind less so the eggs are tender, and the olive oil performed the same function but gave a different flavor profile.

I made the french toast recipe and I'll do it again when hell freezes and heaven burns over. the toast stuck to the pan, the toast are crispy YUK, french toast should be soft, AND IT TOOK FOREVER TO take the stuck toast off the pan even with a brillo pad and soaking overnight. The only good thing was putting the liquid on the cookie sheet covers the bread and it does not waste. FRY PAN FRENCH TOAST IS THE BEST TIME WASTED in the morning!

I'm glad you tried it, and had this result. I thought they looked to crispy for french toast... I agree that is should be pan fried in butter. I would use the pan to soak up all the egg mix though..

Because products are made around the world in different factories to different tolerances. Try expecting more from people trying to sell you something for your hard earned money.

14:50 -- WHAT?! You can't cook on high heat with nonstick! On super low heat nonstick is fine (for a year or so before it fails like all nonstick inevitably does) but nonstick is not rated for high heat. For your product comparisons, could you please start listing all the products in the description so we can make our own choice? I'm much more interested in the carbon steel griddle as it's half the weight of cast-iron with the same performance as cast-iron, yet develops anti-stick properties after a few weeks' use.

When you're testing stovetop pans and griddles, would you please consider induction cooktop usage? The winner aluminum griddle won't work on my induction cooktop, but the cast iron is so heavy, that wouldn't work for me, either (I can just barely lift my 12" cast iron skillet).

It means you are breaking your fast and therefore it is the most important thing you’ll eat. The thought is that it sets you up for the rest of the day or eating window if you are a “faster”. And cereal is perhaps the worst way to break your fast. Nothing but carbs and sugars, how ironic.

Not thrilled with the idea of scouring that crusty baking sheet after the French toast is baked. Also, why add sugar to the custard? Syrup isn't sweet enough for you? I'll stick with my usual recipe, thanks. Love your great scrambled eggs recipe, the asparagus trimming technique and the dull baking sheet tip.

Enjoyed seeing the french toast method. However, I grew up having french toast fried in oil. Growing up I never understood why my friends never had it that way. Personally, there is no other way to make french toast. I will try this way, but am doubtful "I will like it better than fried!

If you don't snap off the ends of asparagus, you potentially, and likely, get the woody fibrous ends. Just snap the ends rather than cutting.
